How to make chocolate-filled marshmallow candy

Soak gelatin and boil syrup
Soak 6 sheets of gelatin in cold water for 15 – 20 minutes until fully expanded.
Boil a mixture of 160g sugar, 80g water, and 100g cooking syrup; when the mixture boils completely, turn off the heat and let it cool.
Tip: You should soak the gelatin at a ratio of water 5 times the weight of the sheets. -
Beat the candy mixture
Put the soaked gelatin into a bowl, then add the syrup, and use an electric mixer to beat at medium speed for about 5 – 7 minutes until the mixture is smooth and has a beautiful white color.
Next, add 5ml of vanilla extract and beat for a few more seconds to blend the vanilla extract into the mixture.

Candy Molding
Evenly sprinkle cornstarch into the mold, then pour the marshmallow mixture into about half of the mold, then place the prepared chocolate filling on top.
Continue to add the remaining marshmallow mixture on top, sprinkle another layer of cornstarch, then leave it at room temperature for about 3 – 5 hours.
Tip: You should gently press the chocolate filling when adding it to the marshmallow mixture so that the candy does not have air pockets and the chocolate filling stays in the middle. -

Soak 6 sheets of gelatin in cold water for 15 – 20 minutes to allow the gelatin to fully expand.
Cook a mixture of 150g sugar, 80g water, and 100g cooking syrup until it boils, then turn off the heat and let it cool.
Tip: You should soak the gelatin in water at a ratio of 5 times the weight of the sheets. -
Whip the candy mixture
Place the soaked gelatin in a bowl, then add the sugar syrup, and use a hand mixer to beat at medium speed for about 5 – 7 minutes until the mixture is smooth and has a beautiful white color.
Next, add the prepared matcha powder, and use the mixer to beat for a few more seconds until the matcha powder is evenly incorporated into the mixture.

Sifting flour and pouring the candy mold
Use a sieve to filter the matcha powder and starch, then mix well.
Evenly sprinkle the mixture into the mold, then pour the marshmallow mixture into about half of the mold and place the prepared chocolate filling on top.
Next, add the remaining marshmallow mixture on top, sprinkle another layer of matcha powder and cornstarch, then leave at room temperature for about 5 hours.
