  • You should choose rau sắn leaves when the cassava plants have just been harvested; at this time, the leaves are still fresh and the dish will taste better.
  • Do not buy rau sắn leaves that are wilted or show unusual signs of disease, such as white spots or mold. These leaves may come from cassava plants that are infested with pests.

How to choose fresh pork ribs

  • Fresh pork ribs have bright pink meat; when pressed lightly, they should have a firm elasticity.
  • You should choose ribs with flat, small bones and a lot of cartilage; this type has more meat and tastes better than larger, round ribs.
  • Avoid buying pork ribs that have an unusual odor, dull-colored meat, or are even slimy.

How to make Cassava Leaf Soup

  • Prepare the ingredients

    Wash the tomatoes, remove the stem, and cut into wedges. Cut off the roots of the green onions, wash them, and chop them finely.

    Wash the cassava leaves and let them drain. Peel the shallots and chop them finely.

    Wash the pork ribs several times and cut them into bite-sized pieces. To eliminate the smell, soak the ribs in basin of diluted saltwater for about 10 minutes, then take them out, blanch them in boiling water for about 5 minutes, and wash them again before letting them drain.

    • Method 1: Boil a pot of water, then blanch the pork ribs for about 3 – 5 minutes, then take them out and rinse under running water to remove all the dirt stuck to the ribs.
    • Method 2: Soak the pork ribs in diluted white wine for about 10 minutes, then rinse with water.
    • Method 3: Another method to remove the smell from pork ribs is to mix a little vinegar into the rice washing water, then soak the ribs for about 10 minutes, then take them out, wash them clean, and let them drain.

    Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 1/2 of the shallots to sauté until fragrant.

    When the shallots are fragrant, add the ribs and stir-fry for about 3 – 4 minutes until they are browned, then add 1 liter of water, bring to a boil, reduce heat, and simmer for 20 minutes.

    Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the remaining shallots to sauté until fragrant.

    When the shallots are fragrant, add the tomatoes, cassava leaves, and 1 teaspoon of monosodium glutamate, stir-fry for about 3 minutes until they are cooked, then turn off the heat.

  • Add cassava leaves and tomatoes to cook the soup

    Add the stir-fried cassava leaves and tomatoes into the pot with the simmering ribs, season with 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, cover, and cook for an additional 20 minutes.

    After 20 minutes, you open the lid and adjust the seasoning to taste, add green onions and turn off the heat.
