How to choose fresh and delicious sour bamboo shoots

  • When buying bamboo shoots, you should first distinguish them based on their outer color. Bamboo shoots that do not contain chemicals and are soaked in salt will have a slightly dark color. In contrast, bamboo shoots that have been “bathed” in chemicals often appear bright white or sometimes a deep yellow (due to being soaked in yellow powder).
  • Try breaking a piece of the bamboo shoot. Natural bamboo shoots soaked in salt will be firm and not easy to break.
  • You can smell the bamboo shoots. Chemically soaked bamboo shoots will have a pungent odor that is hard to bear. Fresh bamboo shoots will have a distinctive fragrant smell, with no strange or musty odors.

  • Preparation of carp

    In this dish, I will use the head, bones, and tail of the fish.

    First, you fillet the fish and separate the flesh. If the bones are too long, cut them into manageable pieces.

    To clean and eliminate the fishy smell, add a little salt and 1 lemon, then start washing the fish.

    During the washing process, remove the internal organs of the fish and wash away any slime. Rinse 3 – 4 times to ensure the fish is completely clean.

  • Prepare other ingredients

    Slice the onion and garlic thinly and chop them finely.

    Wash the cilantro, perilla, and basil, then cut them into pieces. Wash the sour bamboo shoots, shred them into bite-sized strips, and let them drain.

  • Fry the fish

    Add cooking oil to the pot and sauté all the onion and garlic until fragrant.

    Next, add the fish and start frying. Don’t forget to watch and flip the fish to avoid burning, as it will not taste good.

    When the fish is slightly cooked, add 2 liters of warm water to the pot and begin the seasoning step.

  • Cook the hotpot

    Add 2 tablespoons of sugar and 2 teaspoons of salt to the hotpot and wait for it to boil.

    When the hotpot boils, it will produce foam, so you should skim off the foam. After skimming the foam, add the sour bamboo shoots and stir well.

    Once the bamboo shoots are cooked, add 2 tablespoons of lime juice and turn off the heat. Then add 2 tablespoons of sugar, 1 tablespoon of pepper, and 3 tablespoons of fish sauce. If you want it spicy, you can add a few slices of chili according to your taste.

    Mix the hotpot well and wait for 3 minutes to let the flavors meld. After that, turn the heat back on to adjust the seasoning and add the vegetables.

    When the vegetables are cooked, your hotpot is ready. Turn off the heat and enjoy!

    Crispy carp hotpot with sour bamboo shoots has the sour taste of bamboo shoots combined with the natural sweetness of fish, and the broth is refreshing and rich. The fish meat is tender, not flaky, and dipping it in fish sauce is very delicious.

    Enjoying crispy carp hotpot should be accompanied by fresh vermicelli and hotpot vegetables like water celery, water spinach, and banana flower for the best experience.
