How to choose fresh beef ribs
- When choosing beef ribs, you should select pieces that include both bone and meat, so that during cooking, the meat does not crumble while still having a delicious flavor; choose ribs that have flat and small bones.
- Fresh and delicious beef ribs should have a bright red color and a characteristic smell; you should avoid pieces that have a foul odor or preservation smell.
- You can press the rib with your hand; if the meat feels firm and elastic, it is fresh and delicious.
How to choose fresh carrots
- You should choose carrots that are medium-sized, with a straight and elongated shape towards the tail, smooth skin, feel firm in hand, and slightly hard.
- Choose carrots that have a bright, deep orange color, with the green tops still tightly attached to the body.
- Avoid carrots that are bruised, slimy, or have dark spots; if you press them with your hand, they should not feel soft.
- Do not choose excessively large carrots as they tend to be older, with more fiber and fewer nutrients.
How to make Korean Beef Rib Stew

Prepare the beef ribs
Cut the purchased beef ribs into bite-sized pieces, wash them thoroughly, and soak them in salted water for 5 minutes.
Boil 1 liter of water with 1 crushed garlic clove and 70ml of white wine, then add the beef ribs to blanch them clean.
When the ribs are slightly firm, remove them and rinse with cold water.

Prepare other ingredients
Crush the garlic, peel one bulb while finely chopping the other.
Peel the ginger, slice it thinly, and finely chop it.
Wash the green onions, chop half finely and cut the other half into sections.
Peel the carrot, wash it along with the chicken thigh mushrooms, then cut them into round slices to taste.
Peel and wash the onion, dicing one bulb while slicing the other thinly.
Wash the chili and green onion, then chop them finely.
Remove the shell and cut the chestnuts in half.

Make the sauce and marinate the beef ribs
In a bowl, combine 210ml of soy sauce, 5 tablespoons of sugar, 8 tablespoons of white wine, 220ml of water, 1 tablespoon of minced ginger, 1 tablespoon of minced garlic, 1 tablespoon of ground pepper, and 4 tablespoons of sesame oil and mix the ingredients well.
Then add the onions and scallions and stir the sauce well.
Add the entire sauce to the beef ribs and mix thoroughly, letting it marinate for 30 minutes for the sauce to absorb into the ribs.

Simmer the beef ribs with vegetables
Add the marinated beef ribs to a pan with 300ml of water. When the water in the pan starts to boil, add the carrots to simmer together.
Simmer the beef ribs over medium heat for 50 minutes until the meat is tender, then add the chicken thigh mushrooms, onions, chestnuts, and green chili.
Simmer for another 15 minutes, then add the scallions and let it simmer for another 1 – 2 minutes to finish.

This Korean braised beef dish can be served with rice or bread, both are delicious.
