  • You should choose shrimp that have a translucent shell, are still firm, and when smelled, will have a sea water scent.
  • Prioritize choosing those with the head and body tightly attached to each other.
  • At the same time, you should choose those whose tails and legs are folded inward; avoid buying those with tails and legs spread out as there is a high chance they might have been injected with water to look bigger.

How to choose fresh squid

  • Fresh squid usually has a shiny skin, with dark brown skin interspersed with off-white.
  • At the same time, you can also check by pressing with your finger; if the surface of the squid returns to its original state after you remove your finger, then the squid is fresh and you should buy it.
  • Moreover, you should choose those with the head and tentacles firmly attached to the body.

How to prepare Seafood Seaweed Soup with Shrimp and Squid

  • Prepare ingredients

    To eliminate the fishy smell of shrimp, soak the shrimp in a mixture of saltwater and white wine for about 10 minutes, then remove and wash thoroughly with water and let drain. After the shrimp has drained, carefully peel off the shrimp shell.

    To remove the shrimp’s intestinal cord, use a knife to make a slit along the back of the shrimp, gently pull it apart and remove the intestinal cord, then dice it.

    Tip: To eliminate the fishy smell of shrimp, you can also soak the shrimp in a saltwater mixture for about 7 minutes, then wash thoroughly with water and let drain.

    You wash the squid thoroughly. Then, gently hold the head and body of the squid and pull it out, removing the ink sac, eyes, teeth, and internal organs. At the same time, to eliminate the fishy smell of the squid, you soak the squid in a mixture of diluted salt water for about 2 – 5 minutes, then take it out and let it drain.

    Once the squid is drained, you cut it into pieces about 1/2 the length of your finger.

    How to properly prepare squid

    Step 1: With one hand, hold the body of the squid tightly, and with the other hand, hold the head of the squid. Gently pull it out and remove the ink sac.

    Step 2: Cut off the teeth and eyes of the squid.

    Step 3: The next step is to gently make a horizontal cut on the body of the squid, then carefully pull the skin off and discard this part.

    Step 4: Score the squid in a crosshatch pattern, then cut into bite-sized pieces, wash thoroughly with water, and drain in a basket.

    Seaweed soaked in water for about 20 minutes will expand; you take it out basket and let it drain before cutting into bite-sized pieces.

    Place a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add the shallots. Stir continuously, and when the shallots turn golden brown and release a fragrant aroma, add the shrimp and squid that have been chopped.

    Adjust the heat to medium, and stir well to ensure the shrimp and squid cook evenly without burning.

    After about 3 minutes, the shrimp and squid will firm up, add 400ml of filtered water. Boil for about 5 minutes until the soup starts to boil, then add the seaweed.

    Cook for another 7 minutes, seasoning with 1/2 tablespoon of seasoning powder and 1/2 tablespoon of sugar. Then, add all the silken tofu and cook for another 5 minutes. Taste and adjust seasoning to your family’s preference, then turn off the heat.

  • If they have been removed from the shell, prioritize those with fat, firm meat and a fairly uniform shape.
  • You can check by pressing the meat with your hand; if it returns to its original position after releasing your hand, the elasticity is still good, and you should choose them as they are quite fresh.

    Tip: Another effective way to eliminate the beef odor is to soak the beef in a mixture of alcohol and water for 15 minutes, then remove and let it drain.
