  • Prepare the snakehead fish

    To clean the slime off the snakehead fish, first remove all the internal organs, use a knife to scrape off the scales, cut off the fins, and clean the cloudy white membrane inside the belly. Rub salt on the fish’s body, then rinse it with cold water.

    To completely eliminate the slime and fishy smell, use rice water to wash off the slime, then rinse again with water and let it drain.

    Next, use a knife to make diagonal cuts on the fish’s body so that it absorbs the seasoning better.
