  • Prepare the beef

    First, wash the beef with diluted salt water, then rinse it with clean water several times.

    After that, use a piece of string or nylon thread to tie one end of the beef, then continue to roll tightly in a circular manner until all the meat is wrapped, finally tie it again to secure the meat.

    For the pineapple, peel and remove the eyes, then cut it into 2 thick slices, and cut the remaining part into small pieces.

    Next, take the lemongrass, trim the ends, wash it, and cut it into segments. As for the ginger, wash it thoroughly and then crush it.

  • Boil beef and slice beef

    Place a pot on the stove with 1kg of young beef, 100g of crushed ginger, 5 stalks of lemongrass cut into pieces, 1 liter of water, 3 tablespoons of fish sauce, and 2 slices of pineapple squeezed for juice, then add all the meat in, cover and cook over medium heat for 10 minutes.

    After that, open the lid and simultaneously reduce to low heat to boil the beef for another 7 – 10 minutes until the beef is cooked, then turn off the heat, take it out to a plate, and let it cool.

    Finally, use a knife to cut off the string tying the beef, then place it on a cutting board, slice the beef into thin pieces suitable for eating, and arrange it on a plate.

  • Prepare fish sauce

    Take a blender and add all the remaining pineapple, 150g of sugar, 170ml of fish sauce, and 250ml of fermented soybean paste, then blend for 5 minutes at medium speed until the mixture is smooth, then turn off the machine and transfer it to a bowl.

    Next, add 500ml of anchovy sauce and mix well, then season to taste.
