Prepare the pandan leaves
100g of pandan leaves should be washed, the white root part trimmed off, and cut into pieces about 2cm long.
Tip: To prevent the pandan leaves from being bitter, you can soak them in warm water for about 5 – 10 minutes before extracting the juice! -
Blend and extract pandan leaf juice
Prepare a blender, add all the pandan leaves along with 200ml of water and blend until smooth.
Next, pour the pandan juice into a large bowl, strain the remaining pandan leaf pulp using a sieve, and use a spoon to press the pulp to extract as much juice as possible, then skim off the foam on the surface.
Pour the pandan juice into a smaller bowl, cover tightly with plastic wrap, and refrigerate for 20 hours to obtain pandan leaf extract.
How to extract pandan leaf juice without a blender:If you don’t have a blender, you can put the pandan leaves into a mortar, add enough water to just cover the leaves, and use a pestle to pound the pandan leaves until finely crushed, then strain to obtain the juice.
