How to choose fresh, crunchy figs

  • To buy good figs, choose fresh figs that are not too young or too old, with a green skin and a surface covered with a layer of rough fuzz.
  • You should choose figs that feel firm when pressed with your hand, not soft or mushy, with the stem still tightly attached to the fruit.
  • You should not buy figs that have black spots on the outer skin because these are fruits that have been harvested for a long time and will not taste good.

How to Prepare Pickled Fig

  • Prepare the figs

    First, add 2 liters of filtered water, 1 tablespoon of salt, and 2 tablespoons of sugar into a pot, bring to a boil over medium heat, then let it cool. For the figs, peel them clean, and soak them in 1/2 bowl of saltwater while peeling.

    Next, rinse the figs thoroughly, remove them, and prepare another bowl of diluted brine to soak the figs for a second time for 20 minutes to reduce the sap.

    After 20 minutes, take out the figs, rinse them with clean water, and let them drain.

  • Salt the figs

    Next, wash the chili and garlic thoroughly. Then slice the garlic thinly and leave the chili whole. Cut the figs into 4 pieces but keep them whole or cut them completely as desired.

    Once the brine has cooled, pour it into a food container. Layer the figs, garlic, and chili together in the jar, then pour the brine over them until the figs are submerged.

    Tip: To prevent the pickled figs from turning black, keep the figs submerged in the brine.

  • Final Product

    So the pickled fig dish is complete. The figs soaked for 3 – 4 days can be used. The fig pieces are crispy, with a salty and sweet flavor mixed with a bit of sourness, no longer bitter. With this dish, you can serve it directly or use it to cook meat or make sour soup, both are delicious.
