How to choose fresh shrimp
- You should choose those that are still alive, with a transparent shell and a slight scent of seawater, not a fishy smell.
- Do not buy shrimp that are dark in color, unevenly colored, and especially shrimp that are slimy.
- Do not buy shrimp with tails that are spread out as those are shrimp that have been chemically treated.
How to choose fresh and delicious pork
- Quality pork will have a light pink to dark red color, and it should not have a spoiled smell.
- You can press your finger into the meat to create an indentation that does not leave a mark when you lift your finger. If the meat fibers are even, firm, and have good elasticity, then it is good pork.
- Do not buy pork that has bruises, blood clots, or is slimy or mushy.

Prepare vegetables and spices
Wash the garlic, peel it, and chop it finely.
Wash the onion, peel it, and slice it.
Wash the cilantro and keep the roots about 3 finger joints long, then chop it finely.
Wash the Thai lime leaves, remove the stem, then roll them up and chop them finely.

Prepare the shrimp and meat
Wash the shrimp you bought, remove the intestinal tract, and then cut into small pieces about 1/2 finger joint size.
Quick way to remove shrimp intestinal tract
- First, hold the shrimp with both hands so that you can see the intestinal tract.
- One hand holds the head of the shrimp, and the other hand holds the upper part of the body near the head so that the two points are about 1cm apart.
- Next, gently squeeze the head of the shrimp from bottom to top to push the waste from the head of the shrimp out.
- Finally, hold the shrimp waste and slowly pull it out from the body to complete the process.
Wash the pork and slice it thinly.
Then, place the prepared shrimp and meat in the freezer for 45 minutes.

Blend the shrimp and meat
Take the frozen shrimp and meat out.
Put them in the blender along with garlic, onion, coriander roots, 30g of sugar, 60ml of fish sauce, 100ml of coconut milk, 30ml of sesame oil, 1 teaspoon of salt, and a little pepper.
Blend until the mixture is smooth and sticky.
Tip: Before blending, you can place the shrimp and meat in the freezer for a maximum of about 2 hours so that they are fluffy when making the cakes, resulting in a chewier texture.Transfer the blended mixture into a bowl, then add finely chopped Thai lime leaves and mix well.

Shaping and frying the cakes
You put a little cooking oil on a plate and spread it evenly with your hands.
You scoop about 1 teaspoon of the mixture into your hand, shape it into a round shape, and then gently flatten it.
Put a pan on the stove, add 1 tablespoon of cooking oil to the pan, and when the oil is hot, drop each cake into the pan and fry.
Fry until the cakes are golden on both sides, then take them out and turn off the heat.
Tip: Fry the cakes over medium-low heat so they cook evenly from the inside out and don’t burn. -
