Ingredients for Cold Cut Ham Serves 3 – 4 people

Pork belly 1 kg Seasoning 1 tablespoon Salt 1 teaspoon Five spice powder 1 teaspoon Char siu seasoning powder 2 teaspoons Cooking wine 1 tablespoon Pepper 1 teaspoon Sugar 2 tablespoons Fried onion 2 tablespoons Soy sauce 1 tablespoon Shrimp paste color 1/3 teaspoon

Tips for buying good pork belly:

  • Do not choose pieces of meat with a thick layer of fat and skin on the outside as they come from older pigs.
  • The outer membrane is dry, with a light red or bright pink color. When cut, the meat has a bright pink color, with white-pink skin that is soft. It has a distinctive aroma.
  • Press with your hand and then release; if the meat springs back quickly and is pink, it is fresh. If it leaves a mark from your hand, the meat is definitely spoiled.

How to prepare Cold Cut Ham

  • Prepare the marinade sauce

    Mix the marinade ingredients: In a bowl, combine 1 tablespoon of seasoning powder, 1 tablespoon of soy sauce, 1 teaspoon of salt, 2 tablespoons of sugar, 1 teaspoon of five-spice powder, 1 teaspoon of char siu seasoning, 1 tablespoon of cooking wine, 1 teaspoon of pepper, and 2 tablespoons of fried shallots, mix well until dissolved.

    Prepare the color: In another bowl, mix 1 teaspoon of char siu powder, 1/3 teaspoon of shrimp paste color, and 1/2 tablespoon of water, stir well.

  • Marinate the meat

    1kg of cleaned pork belly, score a few lines on the meat to absorb the seasoning.

    Tip for cleaning pork effectively, odor-free:

    • To completely eliminate the odor of pork, before cooking, briefly dip the meat in boiling water for about 2 minutes, then remove and rinse with cold water.
    • Another handy tip is to add a little white wine to the blanching water. The wine is very effective in eliminating odors.

    Marinate one side of the meat with the marinade sauce. Use your hands to gently massage the meat to absorb the seasoning.

    Use a towel to dry the skin of the pork. Marinate the skin side with the prepared color.

    Place the meat in the refrigerator for 2 hours to let it marinate.

  • Roll the meat

    Place a large piece of aluminum foil on the table, with an additional piece of parchment paper on top.

    After marinating, place the meat in the prepared aluminum foil, gently roll the meat up, then use the parchment paper to wrap the meat again. Finally, use aluminum foil to wrap tightly to shape the meat. Wrap an additional layer of aluminum foil around the outside to ensure the meat is secure and does not come undone.

  • Steam the meat

    Prepare a pot of boiling water, place the cold meat in to steam for about 1 hour and 30 minutes over medium heat.

    After the meat is cooked, let it cool and gently remove the aluminum foil, wrap it tightly in a piece of food wrap, and place it in the refrigerator overnight for the meat to firm up and taste better.

    When ready to eat, take the meat out and slice it into small, bite-sized pieces.

  • You can wrap the meat tightly and store it in the refrigerator for about 5 – 7 days, and in the freezer, it can last up to 2 -3 months.
  • When eating, thaw it for 2 -3 hours before use.
