Put a pan on the stove, add 100g of regular rice and 100g of sticky rice, then roast over medium heat until fragrant and the rice changes from opaque white to light yellow.
Put the pan back on the stove, add 100g of peeled mung beans and roast until golden and fragrant.
Next, add the roasted rice and mung beans into a grinder with 1 teaspoon of salt and 1/2 teaspoon of pepper, then grind until fine and smooth.

After purchasing the pig tail, wash it briefly with water and then rub lemon on the surface of the pig tail. After that, rinse it thoroughly with water once more and let it drain.
While waiting for the pig tail to drain, you can proceed to crush ginger and lemongrass.
