How to choose fresh and delicious beef ribs
- You should not choose beef ribs with excessively large bones as they may be from older cattle, and the bones will be very hard, which will take quite a long time to cook.
- To select delicious beef ribs, you should observe the color of the meat piece. Fresh and delicious meat usually has a bright red color, not dark red, and the beef fat should be light yellow.
Note: For ground beef, you can buy pre-ground beef at markets, supermarkets, or buy beef to process and grind at home to ensure safety!

How to prepare Beef Rib Noodles

Prepare the beef ribs
To eliminate the bad smell of beef ribs, wash the ribs with diluted salt water, then rinse with clean water and let drain.
First, place a pot on the stove with 1 liter of water. Then, rinse the beef ribs and add them to the pot when the water is boiling and blanch for 5 minutes.
How to clean beef ribs without odor- Using vinegar and lemon: Use lemon to rub on the ribs or soak the beef ribs in diluted vinegar water for about 5 minutes, then rinse with clean water.
- Using shallots: Roast shallots, then pound them finely and marinate with the beef ribs to eliminate the bad smell and enhance the delicious flavor.
- Using ginger: Roast ginger, pound finely, and rub it on the ribs. Then wash the meat clean with water.
- Using white wine: Soak the beef ribs in diluted white wine for about 15 minutes, then rinse clean with water to eliminate the smell.

Simmering beef ribs
First, you put 1 piece of ginger and 1 onion peeled into the oven and roast for 5 minutes at 180 degrees Celsius.
Tip: If you don’t have an oven, you can roast the onion and ginger directly on the gas stove.
Then, you place a pot on the stove, add 2 liters of water to the pot and bring to a boil. When the water is boiling, add the beef ribs along with sliced ginger and onion into the pot and start simmering.
To let the beef ribs absorb the seasoning and make the broth more flavorful, season with 1 tablespoon of sugar, 1/2 teaspoon of seasoning powder, 1 tablespoon of salt, and stir well.
When the pot of water boils vigorously, skim off the foam that rises to the surface to keep the broth clearer. Finally, turn off the heat and do not cover the pot so that by the next morning, the water released from the onion will help the broth become clearer and more fragrant.

Stir-fried Satay
You heat a pan on the stove with 3 tablespoons of cooking oil; when the oil is hot, add 3 tablespoons of minced lemongrass, 3 tablespoons of minced garlic, 2 tablespoons of chili powder, and 1 tablespoon of chili color powder, and mix well.
To make the satay taste just right, season it with 1 teaspoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of salt, or adjust according to your family’s taste.
You stir-fry the satay over medium heat until it reaches a moderate thickness, not too dry, then turn off the heat.

Cook Beef Rib Noodles
You boil the broth, add 3 tablespoons of shrimp paste, and 3 crushed lemongrass stalks to enhance the aroma of the broth. Next, add 1 tablespoon of satay and stir well. Remember to skim off any foam on the surface (if there is any) to keep the broth clear.
After boiling for 5 minutes, you remove the beef ribs and cut them into bite-sized pieces. You add 2 liters of filtered water, 500ml of beef broth, 100ml of fish sauce, 270g of granulated sugar, 80g of rock sugar, 4 teaspoons of salt, and 2 teaspoons of seasoning powder to the pot.
