- Conversely, do not choose fish with eyes sunken into their sockets; when pressed, the dent remains, indicating these are rotten fish and not delicious.

Purchase red tilapia and clean the scales, gills, and intestines. Use salt to scrub and then rinse thoroughly with water.

How to eliminate the fishy smell of red tilapia
- First, clean the fish by scaling and thoroughly gutting it. Be sure to cut away any blood clots and the cloudy white areas in the fish’s belly.
- Eliminate the fishy smell by rubbing coarse salt on the fish for about 10 minutes and then rinsing it with water. Additionally, you can dilute lemon juice with a little salt in water and soak the fish for about 10 minutes before rinsing.

Prepare other ingredients
Wash tomatoes and cut them into wedges. Clean the green onions and cut them into pieces about 2 finger lengths.
