How to Make Napoleon Cake

Mix Wet Ingredients
Place 2 eggs, 200ml of cold water, 1 teaspoon of white vinegar, and 1/2 teaspoon of salt into a bowl, then whisk thoroughly to combine the ingredients.

Mix Flour and Let it Rest
Next, add 690g of flour and 400g of cold unsalted butter into a blender, blending until the mixture becomes smooth and fine. Transfer the flour to a large bowl, then add in the prepared wet ingredients and mix until well combined.
Pour the dough onto a flat surface, use your hands to knead the mixture until it forms a homogeneous, smooth dough that no longer sticks to your hands. Use a knife to divide the dough into 10 – 12 equal parts and shape them into round balls.
Place the shaped dough balls into a container, cover the container tightly with plastic wrap, and refrigerate for 1 hour.

Make the cream
Next, separate 6 egg yolks into a bowl, add 175g of sugar, 43g of cornstarch, and whisk the mixture until smooth and thick.
On the stove, heat 720ml of fresh milk until hot but not boiling. While heating, remember to stir frequently with a ladle to prevent the milk from curdling at the bottom of the pot.
Gradually pour the hot milk into the egg yolk mixture, whisking well to combine, then pour the mixture back into the pot, cooking on low heat, stirring continuously for about 8 minutes until the mixture thickens, then turn off the heat.
Add 230g of unsalted butter and 2 teaspoons of vanilla extract to the mixture, stirring well to blend everything together until smooth. Cover the mixture with plastic wrap and wait for it to cool completely, and we will have the cream ready.

Shaping the Cake
Place a piece of parchment paper on a flat surface, sprinkle a little flour on top, and place each dough ball on it, rolling them out into very thin pieces.
Put a 20cm cake mold on top, press down gently but do not cut all the way through to create a round outline on the dough, then use a fork to poke holes all over the dough and place it on the tray.

Baking the Cake
Preheat the oven to 190 degrees Celsius for about 15 minutes. Place the prepared tray of cakes inside and bake at 190 degrees Celsius for 10 – 12 minutes until the surface of the cake is slightly golden.
Next, place the remaining pieces of dough in turn inside, baking at the same temperature and time until finished. Then let the cakes cool.

Completion
You separate the edges of the cake to form a round piece of cake and place it on a plate. The leftover edges after separation, you put into a blender, and blend into fine powder.
Lay a few pieces of parchment paper down on the plate, place each layer of cake out, for each layer of cake you spread a layer of cream, smoothing the cream over the entire surface of the cake, then stack them on top of each other until the last layer of cake.
Next, you spread cream around the sides of the cake, sprinkle the blended cake powder all over the cake, the cream will help the cake powder stick.
Finally, you pull out the pieces of paper from under the plate to remove the excess cake powder.
