Tips for choosing good bananas
- For this dish, you should choose bananas that are just ripe, firm, and not rotten; if you choose overripe bananas, they will be mushy, making the dish less tasty. It is recommended to buy sứ bananas or sáp bananas to enhance the chewy texture of the dish!
- You should avoid choosing bananas that are bruised, mushy, or uniformly yellow and dark yellow, as these are bananas that have been injected with chemicals, which are not good for health.
- You should choose bananas that are just the right size, not too large, with a bunch that has both green and yellow bananas, and pick those with black spots.
How to Prepare Fried Banana with Coconut

Prepare the Ingredients
Cut the bananas and place them in a pot, add 1 teaspoon of salt and then add enough water to cover the bananas.
Place the pot on the stove to boil, after the water boils and the bananas start to peel after about 5 minutes, check if the bananas are cooked by poking a chopstick through them; if you feel they are soft, drain the water, if not, continue boiling. After draining the water, put the bananas back into the pot for steaming.
Next, chop the green onions finely.

Boil Sago and Potato Starch
Put the sago in a different pot, then wash it and add water, using your index finger to measure; just make sure the water covers one joint of your finger.
When the water boils, use a spoon or ladle to stir evenly so the sago at the bottom does not burn. Boil until the sago becomes swollen and transparent.
Next, add the potato starch, add a little water, and continue cooking the mixture until the potato starch is clear.

Cook coconut milk
Add 800ml of coconut milk to the mixture of tapioca and sweet potato, and stir well.
Add 4 teaspoons of sugar; you can adjust the amount of sugar according to your taste. Then add 1/2 teaspoon of salt to enhance the coconut milk, increasing the appeal of the dish.
