How to make Phan Thiet hot pot

Prepare the fish and shrimp
200g of fish after purchasing, wash it thoroughly with water to remove the slime, then use a knife to scrape off the scales, remove the tail, head, and insides, and wash it again with water.
150g of shrimp, peel off the shell and remove the shrimp vein, keeping the heads.
Tip: To quickly remove the black vein, use a sharp stick or toothpick to press on the second segment from the head of the shrimp and gently pull the black vein out. -
Boil the meat and fry the eggs
250g of pork belly, wash it thoroughly, then put it in a pot to boil for about 10 minutes, then take it out and cut it into thin strips.
You crack 2 eggs into a bowl and whisk them well. Turn on the stove, add 1 tablespoon of oil, when the oil is hot, pour the eggs in and fry both sides evenly, then cut into strips.
Tip: To keep the meat white and delicious after boiling, boil the meat with water twice as follows:- First time: Boil water with a little salt and vinegar, then add the meat and boil briefly for about 3 minutes, then remove and rinse with water.
- Second time: Boil the meat again with clean water for about 7 – 10 minutes, then remove the meat.

Prepare the vegetables
1 green mango, peel it, then cut it into small strips.
2 cucumbers, peel them clean and cut into long slices to taste.
Herbs, pick the leaves and stems as needed, then soak them in diluted salt water for about 5 minutes, then remove and rinse with water.

Cooking the hot pot broth
Turn on the stove, add 2 tablespoons of oil to heat, then add minced garlic and chili to sauté until fragrant.
Next, add the shrimp heads, stir well until the heads turn red, about 3 minutes.
Then add 30g of shrimp paste, 1 tomato, and 1 diced onion, then stir-fry for about 3 minutes.
After that, add the shrimp meat and 1.5 liters of filtered water, remove the shrimp heads from the pot, then season with 2 tablespoons of fish sauce, 2 tablespoons of sugar, and 2 tablespoons of seasoning powder. Stir well and wait for the broth to boil for about 7 – 10 minutes, then taste and adjust the seasoning as needed.

Making the fish salad
Add the fish, half of the minced garlic and chili, 1 tablespoon of ginger juice, 1 tablespoon of fish sauce, and the juice of half a lime, then use your hands to mix well so that the ingredients absorb each other.

Make the dipping sauce
Add the remaining minced garlic and chili to 50g of roasted peanuts, 2 bananas, 1 tablespoon of fish sauce, 2 tablespoons of tamarind juice, and 2 tablespoons of water into a blender and blend until smooth.
Turn on the stove to low heat, pour the blended mixture into a pan, add 1 tablespoon of sugar, and simmer until it boils for about 5 minutes.
