Prepare the vegetables
After buying, wash the tomatoes thoroughly, drain the water, and then cut them into small pieces.
Do the same with the green onions.

Prepare the shrimp
Wash the shrimp with water, then peel and devein them. Set the shrimp meat aside on a plate.
Quick method to devein shrimp
Count backward from the tail of the shrimp to the second groove between the two segments of the shell, insert a toothpick through, and pull to remove the vein.

Make scrambled eggs
Crack 2 eggs into a bowl, add 1/2 teaspoon of salt, and whisk well.
Heat a pan on the stove. Add a little cooking oil to the pan and lower the heat. Pour the egg mixture into the pan, gently stir with chopsticks to cook the eggs evenly.
Note: To maintain richness, the eggs should be cooked just right, not overcooked.

Making tomato sauce
Place the pan on the stove and then add oil. Wait for the oil to heat up, then add the tomatoes and stir well. When the tomatoes begin to soften, add the shrimp.
You can also add pork belly, chicken, or any other ingredients you like.
Add 1/2 teaspoon of pepper and continue to stir well.
Next, take 220g of tomato sauce, add it to the mixture and stir well, cooking until it boils. You can add 1/2 teaspoon of chili powder to enhance the spiciness and a bit of parsley to make the stir-fried noodles more fragrant.
Add 50 – 70ml of water so that when you add the noodles, they will be softer (If you boil the noodles beforehand, you do not need to add more water).

Stir-frying udon noodles
Take 200g of fresh udon noodles and add them to the pan, stirring well.
Tip: If using dry noodles, you must boil the noodles first!
You can add more water or tomato sauce if needed.
Cook until the udon noodles separate from each other.
Add the fried egg on top and stir well until all ingredients are coated with the sauce. Add the chopped baro onion. And the dish is ready.
