How to cook Mixed Stir-fried Octopus

Prepare the octopus
Wash the octopus with water, then use scissors to cut off the tentacles, removing the ink sac and eyes from the octopus.
Next, squeeze 1/2 lemon, add 1 tablespoon of salt to the octopus, rub it clean, and rinse with water to eliminate the fishy smell of the octopus.
Add 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1 tablespoon of fish sauce to the bowl with the octopus and stir well to dissolve the spices, marinate for 15 – 20 minutes for the octopus to absorb the flavors.

Prepare other ingredients
Wash the cucumber, cut it in half, and slice it diagonally. Wash the broccoli and separate it into small florets.
Wash the tomatoes, remove the stem, and cut them in half. Wash 1/2 pineapple and cut it into bite-sized pieces. Wash the young corn.
Wash the green onions and cut them into sections. Peel and crush the shallots and garlic, then chop finely. Wash the chili and chop it finely.

Stir-fry squid and vegetables
Place a pan on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add all the minced garlic and shallots to sauté until fragrant.
Next, add the octopus and stir well, frying on high heat for about 3 – 4 minutes until the octopus is just cooked, then transfer to a plate.
Continue to add cucumber, pineapple, young corn, and broccoli to the pan. Season with 1/3 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, 1/3 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and 1/2 tablespoon of fish sauce, then stir the vegetables well and fry for 4 – 5 minutes.
Add tomatoes and octopus, stir well for another 1 – 2 minutes, then add chili and green onions, and turn off the heat.
