Clean the clams you bought, remove the shells, and rinse thoroughly with water, then let them drain.
Wash the bean sprouts with water to remove the outer skin and let them drain. Clean the chives and cut them into pieces about 2 finger lengths.

Heat the pan and then add 2 tablespoons of cooking oil, continue to add all the chopped shallots and garlic to sauté until fragrant.

Preparing Ingredients
Wash the clams you bought, remove the shells, then rinse them several times with clean water to get rid of sand and dirt, and let them drain.
Peel the loofah, wash it clean, then cut it in half, and chop it into pieces about half a finger length.
Wash the green onions and shallots, cut the green onions into pieces about 1 finger length, and chop the shallots finely. Trim the base off the enoki mushrooms, then wash them again with water, and separate them!

Stir-frying Clams
Heat the pan, add 2 tablespoons of cooking oil, then add all the chopped shallots to sauté until fragrant.
Continue adding the clams to stir-fry, then add 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of pepper, and 1 tablespoon of fish sauce, and stir well. After that, add the loofah and stir well with an additional 50ml of water, cooking for about 5 – 6 minutes until the loofah is just cooked.
