How to Cook Stir-fried Clams with Bean Sprouts

  • Prepare Ingredients

    Clean the clams you bought, remove the shells, and rinse thoroughly with water, then let them drain.

    Wash the bean sprouts with water to remove the outer skin and let them drain. Clean the chives and cut them into pieces about 2 finger lengths.

  • Stir-fried clams

    Heat the pan and then add 2 tablespoons of cooking oil, continue to add all the chopped shallots and garlic to sauté until fragrant.

    Next, add 1/3 tablespoon of salt, 1 tablespoon of seasoning, and 1/2 tablespoon of sugar and stir well for the clams to absorb the seasoning, cooking for about 2 – 3 minutes.

    Then add the bean sprouts and chives, stir-frying for about 3 – 4 minutes until the bean sprouts are just cooked, then taste and adjust the seasoning before turning off the heat! Finally, add 1 teaspoon of pepper, mix well, and serve on a plate.

  • When choosing loofah, select those that feel heavy, have fresh stems and few blemishes, indicating that the loofah is fresh and has a dense flesh.
  • Avoid choosing those that are too young or too old, as young ones will not be fragrant and sweet, while old ones will be more fibrous compared to ripe ones.

How to choose good enoki mushrooms

  • Mushrooms should have a bean pod shape, be fresh, with firm caps, white and shiny.
  • The stems should not be slimy or slightly brown, not bruised, and the base of the mushroom should not be separated or crumbled.

  • Preparing Ingredients

    Wash the clams you bought, remove the shells, then rinse them several times with clean water to get rid of sand and dirt, and let them drain.

    Peel the loofah, wash it clean, then cut it in half, and chop it into pieces about half a finger length.

    Wash the green onions and shallots, cut the green onions into pieces about 1 finger length, and chop the shallots finely. Trim the base off the enoki mushrooms, then wash them again with water, and separate them!

  • Stir-frying Clams

    Heat the pan, add 2 tablespoons of cooking oil, then add all the chopped shallots to sauté until fragrant.

    Continue adding the clams to stir-fry, then add 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of pepper, and 1 tablespoon of fish sauce, and stir well. After that, add the loofah and stir well with an additional 50ml of water, cooking for about 5 – 6 minutes until the loofah is just cooked.

    Finally, add the enoki mushrooms and stir well for about 2 minutes until the mushrooms are cooked, add the green onions and mix well, adjust the seasoning to taste, and then turn off the heat!

How to choose fresh and delicious clams

  • If you buy fresh clams, choose those that are still alive, fresh, and have no strange smell. It’s best to touch the clam; if it closes its shell, it is fresh.
  • If you buy pre-prepared clams, pay attention to the expiration date printed on the packaging. You should not buy frozen clams or those packed in plastic bags as they are not fresh and can be contaminated with chemicals.

Tips for cleaning clams from sand

Put the clams in rice water or cold water, add a few small cut chili peppers or a little rice vinegar and soak for 1 – 2 hours so that the clams can expel all the mud.
