Ingredients for Clam Curry For 3 people
Clams 1 kg Coconut milk 500 ml Curry powder 30 g Onion 1 bulb Lemongrass 3 stalks Annatto oil 1 tablespoon Fish sauce 1 tablespoon Sugar 1 teaspoon Garlic 1 teaspoon Chili 10 g
Tools: Pot
How to choose good clams:
- Choose those with hard shells, tightly closed, and feel heavy. If the clam is light and can be easily pried open, it means the clam is dead.
- For clams that are slightly open, if you touch them and they close their shells, it indicates that they are still alive and fresh.
How to Prepare Clam Curry

Prepare the clams
Remove dead clams, soak the clams in water for about 2 hours with a few pieces of chili to help them expel sand, scrub the shells clean, and rinse with clean water, then drain.
Quick tip for cleaning sand from clams
You can use warm water at about 50 degrees Celsius to make the clams expel sand more quickly. In water at 50 degrees Celsius, clams sense danger and will protect themselves by absorbing more water, thus speeding up the sand expulsion process.
Usually, it only takes 10 minutes to have clean clams ready for cooking. However, this method requires the right temperature; otherwise, the clams will cook.
