How to prepare Vegetarian Mixed Noodles

Prepare the ingredients
After cleaning the spinach, cut it into 3 parts. Remove the top leaves, keeping only the middle part and the stems.
Peel the carrot, wash it, and cut it into long strips.
Wash the oyster mushrooms, cut off the stems, keep the small mushrooms whole while slicing the larger ones in half.
Soak the wood ear mushrooms until they expand and then cut into strips.
Tip:
When buying spinach, do not rush to remove the stems; instead, soak the whole bunch in water. Spinach is often grown in areas with red soil, so dirt will cling to the stems and leaves. Soaking in water and then rinsing will help remove the dirt. Continue soaking and rinsing until all dirt is gone from the spinach. After that, cut off the stems and wash thoroughly.

Blanch the noodles
The noodles do not need to be washed; just soak them in cold water for about 10 minutes, then remove them. If you want shorter noodles, you can cut them in half; otherwise, leave them whole.
Boil a pot of water and add a little salt to make the noodles chewier. When the water is boiling, add the noodles for blanching and turn off the heat immediately.
After blanching, place the noodles in a colander and drizzle a little cooking oil over them, then mix well.
Note: To keep the noodles chewy and prevent them from sticking together, you must turn off the heat when blanching; if the heat is too high, the noodles will become mushy.

Note:
- When stir-frying oyster mushrooms, wood ear mushrooms, or other types of mushrooms, you should stir-fry over high heat, as cooking on low heat will cause the mushrooms to release water and not taste good.
- You must stir-fry the carrots until cooked; if you leave them raw, the smell of fresh carrots will make the mixed noodles less tasty.
- If you do not like to stir-fry spinach, you can boil water to blanch it, but stir-frying will make the spinach drier, making it better for mixing with noodles.

Put 1 tablespoon of soy sauce, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of dark soy sauce, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, and 1 tablespoon of water into the pan, then mix well and cook until the mixture dissolves.
