- Do not choose pig ears that have a foul smell, are spoiled, or have any strange odor. These are ears that have been stored for too long or have been treated with chemicals.
How to choose fresh green papaya
- The fresh green papayas for making salad are those with thick flesh, few seeds, and when held, they feel firm and the stem still has sap attached.

Prepare the vegetables
Wash all the vegetables including carrots, papayas, lemongrass, ginger, shallots, garlic, and calamondin thoroughly and let them drain.
After the auxiliary ingredients have drained, use a knife to slice all the vegetables thinly, except for the lemongrass which should be smashed and cut into sections.

Prepare and boil pig ears
Wash the pig ears with diluted saltwater or use lemon to rub over the surface to whiten the pig ears, then let them drain.
Put a pot of water on the stove and wait for it to boil. When the water is boiling, add the pig ears along with 5 grams of salt, smashed lemongrass cut into pieces, and sliced ginger until the pig ears are cooked, then remove and soak them in ice water.
Tip: To make the pig ears crispier, tastier, and whiter, after boiling, soak them in a bowl of ice water for 10 minutes.

Cook vinegar and sugar
Add 100gr of sugar, 100ml of vinegar, and 2gr of salt into a pot. Then turn on the stove and cook until the sugar and vinegar are completely dissolved, then turn off the stove and let it cool.

When the vinegar and sugar mixture has cooled, add the sliced vegetables including carrots, papaya, garlic, shallots, and chili to soak for 1 hour.

Add 100ml of boiling water and mash it with ripe tamarind to extract the tamarind juice.

Once the pork ear has soaked long enough in ice water, use a knife to slice the pork ear thinly. Next, add the vegetables that have been soaked in vinegar and sugar and sliced tangerine to mix with the sliced pork ear.
