Noodles 1 kg Beef brisket 500 gr Crab meat 250 gr Pork sausage 400 gr Onion 2 bulbs Ginger 1 piece Shallots 5 bulbs Lemongrass 4 stalks Green onions 5 stalks Fried onions 1/2 tablespoon Fried garlic 1 teaspoon Rock sugar 3 tablespoons Annatto oil 3 tablespoons Fermented shrimp paste 1 teaspoon Accompanying vegetables A little (bean sprouts/ shredded banana/ shredded water spinach/ Vietnamese coriander/ aromatic herbs/ cilantro) Common spices A little (salt/ sugar/ monosodium glutamate/ seasoning granules/ pepper)

How to choose fresh beef shank

  • Female beef is usually tastier than male beef; if you can get veal, that’s even better.

    Add 3 liters of filtered water into the pressure cooker along with the grilled onion, ginger, shallots, lemongrass, and beef brisket.

    Season with 1/2 tablespoon of salt, 1 tablespoon of seasoning powder, 1 tablespoon of rock sugar, stir well, and cook for 25 minutes in the “Meat Stew” mode.

  • Mix the crab cake

    Add the crab meat and the raw sausage into a bowl.

    Add 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1/2 tablespoon of fried onions, 1 teaspoon of fried garlic, 1 teaspoon of pepper, 1 tablespoon of annatto oil, mix and knead well.

    Then place the mixture in the fridge for 10 minutes then take it out and knead it once more.

    Bean sprouts, shredded banana, shredded water spinach, Vietnamese coriander, aromatic herbs, and cilantro should be washed clean and drained.

    The remaining onion should be peeled, washed clean, and sliced thinly. To reduce the pungent smell of the onion, soak it in cold water with a little cilantro for about 5 minutes.

  • Cook the crab meat

    After 25 minutes, remove the beef brisket from the pressure cooker, use a sieve to strain the broth and lemongrass, then put it back in the pot and heat it on high.

    When the water boils, shape the mixed crab meat into bite-sized balls and add them to the pot, then lower the heat to a simmer.

    When the crab meat floats on the surface, add 1 teaspoon of seasoning, 1 teaspoon of salt, 1 tablespoon of rock sugar, 2 tablespoons of annatto oil, and 1 teaspoon of shrimp paste.

    Simmer until the broth boils again, then add chopped green onions, adjust the seasoning to taste, and turn off the heat.

    Beef brisket after cooling is cut into bite-sized pieces.

    Blanch the noodles in boiling water for about 1 minute, then drain the water.

    Then add the beef brisket, crab cake, a bit of Vietnamese coriander, cilantro, sliced onion, and pepper on top, ladle the broth over, and it’s ready to enjoy.
