Ingredients for Braised Beef Brisket in Soy Sauce Serves 4

Beef brisket 800 gr Soy sauce 120 ml (soy sauce) Palm sugar 60 gr Coriander seeds 1 tablespoon Cinnamon 1 stick Cardamom 1 pod Star anise 2 pieces Cloves 2 gr Shallots 6 bulbs Onion 1 bulb Ginger 20 gr Lemongrass 2 stalks Chili 1 piece Peppercorns 1 tablespoon Cooking oil 3 tablespoons Salt a little

How to choose fresh and delicious beef shank

Fresh and delicious beef shank has a bright red color, fine texture, a fragrant beef smell, and light yellow fat.

You should buy beef shank at reputable food stores that ensure hygiene, have clear origins, and the meat should be bright red when thawed, not discolored, and should have a fragrant smell.

How to prepare Braised beef shank in soy sauce

  • Prepare the beef shank

    The beef shank you bought should have excess sinew and fat removed and be rinsed with water.

    Then, place the beef shank in a basin and add 1 tablespoon of salt along with a little water. Next, wash the beef shank thoroughly with the saltwater mixture.

    Rinse with water and wash 2-3 more times to ensure the beef shank is clean and free of any odor.

  • Grill and toast dry ingredients

    Take 1 sheet of aluminum foil to line the bottom and place the ingredients on top, including: 1 onion cut in half, 1/2 piece of ginger, 5 shallots, 1 horn chili prepared above.

    Then, wrap the ingredients and grill for 4 – 5 minutes until fragrant.

    Note: During grilling, remember to turn both sides evenly so that the ingredients cook uniformly and avoid burning.

    After grilling, take the ingredients out onto a plate.

    Next, prepare the ingredients for toasting. Crush the cardamom.

    Place a pot on the stove, add the spices: coriander seeds, star anise, cinnamon, cloves, and crushed cardamom to toast. Add 1 tablespoon of black pepper to toast together until the mixture is golden and fragrant.

    Transfer the toasted mixture to a plate and let it cool.

    Lemongrass is smashed and then cut into small pieces. Half of the ginger and the remaining shallot are also smashed.

    Take the ginger that was just grilled and cut it into small pieces and smash it.

    To stew the beef brisket, prepare a pressure cooker and add 3 tablespoons of cooking oil, then add the lemongrass, shallots, and smashed ginger and sauté until fragrant.

    Add the beef brisket to the pot and stir well.

    Next, add all the soy sauce and brown sugar that you have prepared. Add 2 – 3 cups of filtered water into the pot, just enough to cover the beef brisket.

    Add the grilled spices (onion, ginger, shallots, chili) into the pot. The roasted spices (coriander seeds, star anise, cardamom, cloves) should be placed in a bag and dropped into the pot. Finally, add the smashed lemongrass to enhance the aroma.

    Cover the lid and stew for about 10 – 15 minutes.

    Tip: In case you do not have a pressure cooker, pour water so that it completely submerges the beef brisket and stew for about 2 hours, until the water is just reduced.

    After the beef brisket has been simmered for 10 – 15 minutes in the pressure cooker, you open the lid and use chopsticks to check if the brisket is tender. If the chopsticks can easily pierce through, the brisket is tender.

    At this point, transfer the brisket to another pot.

    Use a sieve to filter out the solids from the lemongrass, ginger, and shallots.

    Continue cooking over medium heat until the liquid reduces to about the bottom of the pot.

    Finally, take the brisket out onto a plate, cut it into bite-sized pieces. The dish is now complete and just waiting for you to enjoy.

    The piece of brisket is tender, evenly absorbed with soy sauce, blending with the aroma of the spices. Just smelling it is already wonderful.
