Prepare the beef shank
The beef shank you bought should have excess sinew and fat removed and be rinsed with water.

Rinse with water and wash 2-3 more times to ensure the beef shank is clean and free of any odor.

Grill and toast dry ingredients
Take 1 sheet of aluminum foil to line the bottom and place the ingredients on top, including: 1 onion cut in half, 1/2 piece of ginger, 5 shallots, 1 horn chili prepared above.
Then, wrap the ingredients and grill for 4 – 5 minutes until fragrant.

After the beef brisket has been simmered for 10 – 15 minutes in the pressure cooker, you open the lid and use chopsticks to check if the brisket is tender. If the chopsticks can easily pierce through, the brisket is tender.

Use a sieve to filter out the solids from the lemongrass, ginger, and shallots.
Continue cooking over medium heat until the liquid reduces to about the bottom of the pot.
