Soak agar powder and activate gelatin
Mix 250g of granulated sugar with 8g of jelly powder and then add 1.1 liters of unsweetened fresh milk. Stir continuously to dissolve the sugar and jelly powder, then let the mixture soak for 10 minutes.
Add 80ml of water to mix well with 35g of gelatin, and soak for 15 minutes to let the gelatin bloom.

Cooking cheese jelly
After soaking for 10 minutes, we put the jelly powder on the stove and stir continuously with a spoon over low heat until the milk warms up and the jelly powder completely dissolves.
Next, add 250g of cream cheese to dissolve together with the mixture over low heat. When the milk and cheese mixture starts to boil, we add the soaked gelatin and stir well again.
When the mixture boils again, turn off the heat, and at this point, add 200ml of whipping cream while using a spoon to stir well to dissolve. If the mixture feels a bit thick, you can add another 200ml of boiling water.
Tip:- To help the cream cheese dissolve faster, you should leave the cream at room temperature before cooking.

Color Mixing
Use a sieve to filter and evenly pour the cheese mixture into 3 different molds to carry out the color mixing process.

Once the colors are mixed, place the mixtures in the refrigerator for about 3 – 4 hours.

- To make it easier to remove the cheese mixture without breaking when it sets, you should use soft, flexible molds instead of hard molds.

Cook the sugar water
Place a pot on the stove, add 1.5 liters of water along with 50 grams of pandan leaves and 300 grams of rock sugar to cook the sugar water. Keep it on high heat and cook for about 5 minutes.
Then add the canned lychee juice, remove the pandan leaves, and turn off the stove to let it cool completely.

Place a skillet on the stove, turn on the heat and wait for the skillet to get hot, then add 100 grams of almonds and roast thoroughly for about 3 minutes. When the almonds are evenly golden, turn off the heat.
