How to make Fried Tofu with Plum Sauce

Mixing the batter
Put 100g of tempura flour into a bowl, gradually add 4 – 5 tablespoons of water into the flour, while adding water, continuously stir until the batter thickens slightly, reaching a moderate consistency.
Tip: You should add each tablespoon of water to control the thickness of the batter, do not pour it all at once to avoid making the batter too thin. -
Dusting the tofu and frying
Use a knife to cut the tofu into slices about 1/2 finger thick for easy eating.
Then, roll each slice of tofu in the tempura flour first to coat it evenly, then roll it in the panko breadcrumbs. Do this in order until all the tofu is used up.
Heat a pan over medium heat, add about 50 – 70ml of cooking oil, and heat the pan.
When the oil starts to bubble, add the tofu to fry, turning it over until both sides are golden and crispy, then remove to a plate (lined with paper towel) to drain the oil.

Making the sauce
Heat a pan on the stove, add about 2 tablespoons of cooking oil to the pan, then add green onions to the pan and sauté until fragrant over medium heat.
Next, add the chicken thigh mushrooms and stir-fry for about 5 minutes until the mushrooms are cooked.
Then, gradually add 2 tablespoons of plum sauce, 1 tablespoon of tomato sauce, and 1 tablespoon of ketchup (or chili sauce) to the pan. Stir the mixture well and add minced chili, stirring for about 3 – 5 minutes until the sauce mixture boils, then turn off the heat.

Arrange the fried tofu slices on a plate, pour the plum sauce over them, and garnish with a few cilantro sprigs for an attractive look.

Prepare the ingredients
Cut the white tofu into rectangular sticks about the length of one finger.
Wash the chives, and cut them into pieces the same length as the tofu sticks.
Do the same with the carrot; peel it and cut it into thin strands.
Tip: Remember to save about 2 chives for decoration. -
Marinate the tofu
To marinate the tofu, add about 1 teaspoon of vegetarian seasoning to the tofu bowl, mix gently and let it marinate for about 10 minutes for the tofu to absorb the seasoning.

Shaping
The seaweed sheet is folded in half, then divided into three equal parts. Then cut it in half again.
Place the seaweed sheet on a cutting board, and sequentially add a bit of carrot, chive flowers, and a stick of tofu on top of the seaweed.
Finally, slowly roll the seaweed up, applying a little water to the edge of the seaweed to make it more securely wrapped. Do this step by step until the ingredients are finished.
The chive flowers should be thinned out, then use the tip of a scissors to make a small diagonal cut and soak them in water to form fringes, helping to coat and fry to make the dish more visually appealing.

Dough rolling and frying
You mix about 100g of flour with water in a ratio of 1:2 so that the flour mixture becomes slightly diluted.
Next, you roll the seaweed rolls in the crispy flour first, rolling evenly to coat the seaweed rolls with flour. Then roll once more in the breadcrumbs.
Continue rolling each roll through the crispy flour, then the breadcrumbs until finished.
Place a pan on the stove, add oil to cover the pan, and heat the pan over the fire. When the oil in the pot starts to boil, you add the flour-coated rolls to fry, stirring evenly until the rolls are golden and crispy, then remove and drain the oil.

How to choose non-Gypsum tofu
- A piece of tofu should have an off-white color; if the tofu is yellow or has a yellowish tint, it contains gypsum. The yellower the tofu, the more gypsum it contains.
- You should buy a piece of tofu that feels light and soft when held. If it feels heavy, firm, a bit hard, or too square, then you shouldn’t buy it as it contains a lot of gypsum.
- Real, pure tofu has a distinctive fragrant smell, while tofu containing gypsum will have a faint smell of lime or no smell at all.
