Chicken breast 400 gr (or deboned chicken thighs) Broccoli 400 gr Chicken broth 1/2 cup Large garlic 2 cloves Tapioca starch 1/2 tablespoon Sesame seeds 1 tablespoon Chopped ginger 1/2 teaspoon Soy sauce 2 tablespoons Honey 1/2 tablespoon Red chili 1/2 teaspoon Rice vinegar 1 tablespoon Salt 1 teaspoon Pepper 1 teaspoon Butter 1 teaspoon Olive oil 1 tablespoon

How to choose fresh and good chicken

  • You can buy chicken breast or deboned chicken thighs at the market or supermarket. Choose pieces of chicken that are elastic when pressed lightly.
  • Choose chicken with light yellow or dark yellow meat, without bruises, blood clots, or slimy texture. At the same time, the skin should be thin, smooth, and have no unpleasant odor.
Tip: You can use cornstarch or potato starch instead of tapioca starch if you don’t have it.

How to Prepare Stir-fried Broccoli with Chicken

  • Prepare the Chicken

    After purchasing the chicken, you proceed to prepare the chicken by rubbing it with coarse salt and washing it again with clean water, then let it drain. After that, use a knife to cut the chicken into bite-sized pieces, according to your preference, and marinate with 1 teaspoon of salt and 1 teaspoon of pepper in a bowl for about 4 minutes.

    • Method 1: Rub slices of lemon and a little coarse salt on the chicken, then wash it with clean water.
    • Method 2: Rub minced ginger and white wine on the chicken for about 15 minutes, then wash it clean.
    • Method 3: Mix vinegar with salt in a 1:2 ratio, rub the mixture on the chicken and wash it with clean water.

    For the broccoli, cut it into small florets, about 3 – 4cm in height. For the broccoli stems, you should peel off the tough outer layer (if any) and cut them into pieces similar to the florets. Next, wash with diluted salt water and rinse with clean water, then let it drain.

    Peeled garlic should be minced finely.

    Place a pan on the stove over medium heat, wait for the pan to heat up, then add 1 teaspoon of melted butter along with 1 tablespoon of olive oil.

    Next, add all the marinated chicken, stir-fry evenly for about 8 minutes until the chicken is firm and golden, then drain the oil.

    Using the same pan, add minced garlic to sauté until fragrant. Next, add all the prepared broccoli. Stir the broccoli with 1/2 cup of chicken broth, then cover to cook for about 5 minutes on low heat.

    Open the lid and transfer the broccoli to a bowl.

Finally, add all the chicken (that has been stir-fried), and stir well over medium heat for about 2 minutes. Turn off the heat.

    Scoop rice into a bowl, add a moderate amount of broccoli along with the chicken in sauce, and sprinkle sesame seeds before enjoying.

  • You can buy tofu at the market or supermarket, or even make it at home for safety.
  • When buying tofu, you should choose pieces that are white, as tofu with a darker yellow color indicates the use of too much gypsum, which is not good for health. Good tofu appears smooth, feels soft to the touch, and has the characteristic aroma of soybeans.

How to Prepare Stir-fried Broccoli with Tofu

  • Prepare the tofu

    After buying the tofu, rinse it briefly in water and then use a dry cloth to absorb any excess moisture. Next, cut it into bite-sized cubes, for instance, one tofu piece can be cut into 12 small cubes.

    Tip: If you have a microwave, after rinsing the tofu, wrap it in paper towels and place it in the microwave to dry for about 2 minutes.

    Place a pan on the stove over medium heat, add 1 tablespoon of sesame oil and 1 tablespoon of cooking oil. Wait for the oil to heat up, then add the tofu to fry until golden, then remove and drain.

    Note: Do not fry the tofu too crispy as it will affect the dish.

    For the broccoli, cut it into small florets, and peel the stems, then cut them into pieces similar to the florets. Afterwards, wash them in saltwater and rinse with clean water, then drain.

    Peel the garlic and mince it finely. Peel and mince the ginger.

    Next, using the tofu frying pan, add all the broccoli (prepared) along with 3 tablespoons of vegetable cooking water, cover the pot, and cook for about 5 minutes.

    Then, uncover, and add minced garlic, ginger, 1/2 tablespoon of sesame oil, 2 teaspoons of maple syrup, and 1/4 cup of soy sauce, stir well.

    Gradually add: 1 tablespoon of rice vinegar, the cornstarch mixture (consisting of 1 tablespoon of cornstarch mixed with 1 tablespoon of water), and 30g of toasted sesame seeds, stir for about 2 minutes.

    Finally, pour all the fried tofu into the pan, mix the mixture for another 2 minutes, then turn off the heat.
