Ingredients for Grilled Marinade For 500gr of sauce

How to prepare Marinade for Grilled Food

Blend the mixture of onion, garlic, and lemongrass
Peel and wash the onion, shallots, garlic, and green onions. Then, chop the onion into smaller pieces to blend faster. Clean the lemongrass and cut it into sections.
Put all the ingredients into a blender and blend until the mixture is smooth. Use a strainer to filter the mixture into a bowl, using a spoon to stir back and forth to let the liquid flow down into the bowl.
Tip: You can chop the ingredients beforehand to make blending easier and quicker. -
Make annatto oil
Heat a pan and add 10g of annatto seeds, then add 150ml of cooking oil, turn on low heat and stir well to extract the color from the seeds.
Once the oil turns red, turn off the heat and remove the seeds to let the oil cool, avoiding leaving it too long as it may make the oil bitter.

Mix the marinade seasoning mixture
Add 10ml of satay oil, 5ml of sesame oil, 3g of curry powder, 10ml of fish sauce, 20ml of soy sauce, 20g of chili sauce, 20g of honey, 20g of condensed milk, 5g of salt, 20g of seasoning powder, and a little pepper to the blended mixture of onion, garlic, and lemongrass.
Stir well until the mixture is fully dissolved.

Cook the marinade seasoning sauce
Add the mixed seasoning mixture to the cashew oil pan, turn on medium heat and cook for 2 – 3 minutes until the mixture boils, then turn off the heat and let it cool. Once the mixture is completely cool, store it in a jar and keep it in the refrigerator.

How to Store Marinade Sauce for a Long Time
When the marinade mixture has completely cooled, put it in a tightly sealed jar and store it in the refrigerator for 1 – 2 months.
