Note:
- You can use leftover rice or cook fresh rice for frying; however, leftover rice will make the fried rice fluffier and tastier.
- If you use freshly cooked rice, it’s best to use long-grain rice that is fluffy, soft, and fragrant for frying. If you use sticky rice, add a little cooking oil when cooking so that the rice grains separate well when done.
How to Make Fried Rice with Bacon

Fry the Bacon
Heat a pan on the stove, when the pan is hot, add diced bacon (2cm) to fry until some fat is released and the bacon is slightly golden, then remove the bacon and place it on a plate lined with paper towels.

Prepare the vegetables
Wash the vegetables, then dice the carrots and green beans, while cut the kimchi into small squares about 1.5cm.

Sauté the vegetables
Add minced garlic to the pan where you fried the meat and sauté until golden and fragrant. Then add the carrots, green beans, and kimchi, stir-frying until the vegetables are just cooked.

Fry the rice
Add the white rice to the pan with the sautéed vegetables and fry it evenly with the vegetables, seasoning with 1 tablespoon of soy sauce and 1 tablespoon of sesame oil. Finally, add the bacon and chopped green onions, stir well, turn off the heat, and serve the rice on a plate.

Fry the eggs
Place a pan on the stove, set to medium heat, then coat with a thin layer of oil, waiting about 10 – 20 seconds for the oil to heat up. Quickly crack the eggs in and maintain the heat and pan for 10 – 15 seconds. When the egg whites start to cook, quickly turn off the heat and place the eggs on the plate of rice.

Tips for frying crispy, golden rice, with grains that are fluffy and not sticky

- Use a cast iron pan or a deep pan for frying to achieve crispy rice and easily mix the ingredients.
- For crispier rice, dry a portion of the rice in the sun until crispy or put it in the freezer until it’s dry, or mix that portion with a little tapioca flour and cornstarch, then fry it until crispy, lightly crush it into small pieces, and mix it with the fried rice just before serving.
