  • Prepare the eel

    After buying the eel, clean the insides and rinse it under running water. To remove the slime from the eel, rub it with salt all over its body and rinse it several times with water, then drain and cut it into bite-sized pieces.

  • Marinate the fish

    Fresh turmeric is peeled, rinsed with water, drained, then sliced and put into a mortar to grind finely. The shallots are crushed.

    Put the fish into a pot along with 1 tablespoon of cooking oil, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 tablespoon of sugar, 1 teaspoon of chili powder, crushed turmeric, crushed shallots, 2 tablespoons of fish sauce, 1/2 teaspoon of ground pepper, then mix well and marinate for 30 minutes for the fish to absorb the spices.

  • Cook the eel

    Place the pot containing the eel on the stove, adjust to medium heat, and briefly stir to firm up the fish.

    Then, pour water into the pot so that it completely covers the fish and proceed to cook until the water in the pot is nearly evaporated.

    Finally, taste and adjust the seasoning as needed, then turn off the stove and serve the dish on a plate.
