- Delicious roasted duck usually has pinkish-white meat, the skin often has a natural yellow or brown-orange color, and when tasted, the meat is chewy and flavorful, absorbing the spices well. The skin and meat are also tightly connected, with the fat being yellowish-white without red spots, and there is no unusual odor.
- In contrast, low-quality roasted duck will have meat that is flaky when tasted, lacking sweetness, with the skin and meat not being tightly connected and easily separating, accompanied by an unpleasant smell.
- To cook this dish, you should choose duck thigh or breast meat, as it will taste better.
As for shiitake mushrooms, you can use either fresh or dried shiitake mushrooms in this dish.
How to cook Duck Noodle Soup with Roasted Duck

Prepare the ingredients
After purchasing the bok choy, cut off the roots and remove any damaged leaves. Soak the bok choy in diluted saltwater for about 10 minutes. Then wash it thoroughly. Cut the bok choy in half.
You can buy fresh or dried shiitake mushrooms. For dried shiitake, soak them for about 30 minutes to soften. Then cut off the stems and let the mushrooms drain.
Tip for soaking shiitake mushrooms to be soft and clean:
- First, you need to soak the shiitake mushrooms in hot water at 60 – 80 degrees Celsius for about 7 – 10 minutes to rehydrate them.
- Then gently rub them with your hands to remove all dirt and rinse them with clean water so they can be cooked right away.
Cut the roasted duck into bite-sized pieces.

Blanching noodles and vegetables
Boil water with half a teaspoon of salt, add bok choy to blanch briefly.
Bring a pot of boiling water, to prevent the noodles from sticking together, use half a kilogram of noodles for every 4 liters of water.
When the water is boiling, add the noodles and blanch for about 2 – 3 minutes depending on the type of noodles (check the instructions on the package for the specific type of noodles).
Tips for delicious blanched noodles that don’t become mushy:
- When the water is boiling, reduce the heat to medium or low and blanch the noodles until nearly cooked; do not overcook them as they will become mushy and unappetizing.
- During blanching, you should add a little salt to the water to enhance the flavor of the noodles.
- After the noodles are cooked, drain them in a colander, then add a few drops of olive oil or cooking oil to prevent them from sticking together.

Cooking the broth
Place a pot on the stove, add 150ml of filtered water to the pot. Then add orange peels, cinnamon bark, star anise, and cloves to the pot and cook over medium heat until boiling.
Note: because star anise and cloves are very small, it is difficult to retrieve them, and they can make the broth gritty. Therefore, before adding them to the pot to cook, you should put all the star anise and cloves in a tightly tied cloth bag.
When the cinnamon water has boiled, add 100ml of chicken broth to the pot (if you don’t have chicken broth prepared, you can substitute it with fresh coconut water). Season the pot with 3 tablespoons of soy sauce, 3 tablespoons of oyster sauce, 2 tablespoons of sugar, and 2 tablespoons of seasoning powder. Stir well.
Add the duck and shiitake mushrooms into the pot and simmer on medium heat for another 20 minutes to complete.
