How to Choose Good Duck Meat
- Choose ducks with smooth or sufficient feathers, select ducks that are mature with a round breast, and thick neck and belly skin.
- You can pull the two duck wings together; if they interlace just right, then it’s a good choice.
- For pre-prepared ducks, choose those with outer skin that is yellow and not overly dark, press your hand against it to feel firm meat with good elasticity.

Prepare the duck
To clean and eliminate the smell of duck meat, after buying, rinse it briefly with water, then use salt and a little alcohol to rub it thoroughly, removing all the fine feathers.
Then rinse it with water once more to clean it, drain and cut it into bite-sized pieces, about the size of a finger joint.
How to eliminate the smell of duck meat
- Method 1: Use salt, white alcohol, and crushed ginger to rub evenly over the duck for a few minutes, then wash it clean with water.
- Method 2: Rub salt evenly over the duck, then use a halved lemon to rub it over the duck again and rinse it clean with water.

Marinating the duck
Marinate the duck meat with 1/2 of the chopped shallots and minced garlic, 1 teaspoon of oyster sauce, 1 teaspoon of chili sauce, 1 teaspoon of satay, 1 teaspoon of seasoning powder, and 1 teaspoon of fish sauce.
Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, mix well and let the duck marinate for about 30 minutes to absorb the flavors.

Braised duck
Place a pan on the stove over medium heat, add 2 tablespoons of cooking oil to the pan, and sauté the remaining shallots and garlic until fragrant.
When the shallots and garlic are fragrant, add the duck meat and stir-fry over high heat for 5 minutes until the meat is seared.
Add 330ml of beer, adjust the heat to medium, and braise for another 15 minutes until the duck is tender, and the sauce thickens. Adjust the seasoning to taste and add green onions and chili, then turn off the heat.
