How to choose fresh and quality pork belly
- Choose meat that is light red or bright pink. When cut, the meat should appear pinkish-white, slightly shiny, and the layer of fat in between should be bright white.
- Good quality pork belly should have the meat and fat tightly attached to each other, not too loose when held in hand. The outer skin and fat layer should be about 1.5 – 2cm thick.
- Do not buy meat that has a fishy smell or is spoiled, as it may have been stored for too long or injected with chemicals, which can be unsafe to eat.

To remove the odor and clean the pork belly, soak it in diluted salt water for about 15 minutes. Then rinse thoroughly and let it dry.

- Method 1: To effectively remove the odor from pork belly, boil a pot of water and then briefly blanch the meat for about 2 minutes, after which you take it out and rinse it with cold water.

Peel the ginger, wash it clean, and slice it thinly. Cut off the roots of the white onion, wash it clean, and slice it thinly.
Wash the red chili, slice it. Cut the yellow lemon in half and squeeze to extract the juice.
Basil should be picked to take the tender top leaves, not too old, then wash it clean and chop it finely.

Boil pork belly
Put sliced ginger and washed pork into a pot, add 1 spoon of salt, 1 teaspoon of ground pepper, 700ml of water, place the pot on the stove and boil the meat on high heat.
When the water boils, reduce the heat and simmer for 20 minutes. After 20 minutes, turn off the heat, let the meat rest in the pot on the stove for another 10 minutes, then take the meat out.
