How to choose green papaya for making vegetarian nem chua
- You should choose fruits that are freshly picked, with firm papaya flesh, smooth green skin, and no spots or holes on the surface.
- For health safety, you should buy papaya from reputable supermarkets or gardens to avoid mistakenly purchasing papayas that have been soaked in harmful chemicals.
- To make the vegetarian nem chua crispier and tastier, you should choose the “duck beak” variety of green papaya because it is crunchier and has thicker flesh than other types of green papaya.

How to make vegetarian fermented pork from papaya

Prepare the ingredients
After buying the papaya, remove all the seeds and the skin, then cut the papaya into pieces of moderate length, about the length of a hand, then rinse the papaya with clean water and use a multi-purpose grater to shred the papaya into small strands.
Rinse the shredded papaya about 3 – 4 times with diluted salt water, then use your hands to squeeze the papaya strands tightly and place them in a basket to drain.
Next, soak the vegetarian ribs in hot water for about 15 minutes until they swell and soften, then remove them and rinse with clean water 3 – 4 times, squeeze out the excess water, and tear them into bite-sized strips.
Beetroot, after purchasing, peel, wash it clean with water, and then cut it into small pieces.
Then, put the cut beetroot along with 1/2 cup of filtered water into a blender and blend until smooth. After that, use a thin cloth or sieve to extract the beetroot juice and discard the pulp.
Finally, soak the agar-agar strands in warm water for about 10 – 15 minutes, then remove them and let them drain.

Stir-fried vegan ribs
You heat a pan and add 1 tablespoon of minced garlic, then sauté until the garlic is fragrant, then add the shredded vegan ribs along with 1 tablespoon of salt and 2 tablespoons of seasoning and stir well until the spices are evenly absorbed into the ribs and the pieces of ribs are golden brown, then turn off the heat.

Prepare and cook jelly
You soak 25g of jelly powder in a pot with 2.5 cups of water for about 30 minutes for the jelly powder to expand evenly, then place the pot on the stove, cook over high heat, and stir continuously.
You stir until the jelly in the pot thickens, then reduce the heat and continue to cook and stir the jelly in the pot.

Mixing ingredients for the spring rolls
After stirring and cooking the jelly for 2 minutes, add 3 tablespoons of vinegar and 3 tablespoons of sugar into the pot and mix well.
When the sugar is completely dissolved, add the beet juice, fried vegetarian ribs, and soaked jelly strands, stirring well until all the ingredients are combined, then turn off the heat.
Next, add the shredded papaya and continue to mix until all the ingredients are well blended, then stop.

Pouring into molds and finishing
Pour the freshly made vegetarian sour spring rolls from the pot into a large mold and spread the mixture evenly in the mold, then sprinkle 3 tablespoons of whole pepper over the surface of the spring rolls.
Wait about 25 minutes until the vegetarian sour spring rolls cool down, then place them in the refrigerator and leave overnight.
The next day, take the vegetarian sour spring rolls out of the mold and cut them into bite-sized square pieces about 2 finger lengths.
For each piece of vegetarian spring roll, add a slice of garlic, 3 slices of chili, and 2 leaves of Vietnamese coriander on top. Finally, wrap the piece of spring roll with food-grade plastic wrap to complete.
Note: When spreading the freshly made sour spring rolls into the mold, remember to do it quickly so that the spring rolls do not harden before being shaped! -
