How to Choose Fresh Durian
- Shape: Fruits that are slightly misshapen are usually of better quality than round large ones.
- Stem: Choose fruits with fresh stems that have a strong aroma. You can gently press with your finger to test; if the stem feels wet, it is still fresh.
- Durian spikes: Choose fruits with fresh-looking spikes that are green, firm, and spread wide.
- Durian segments: Ripe durians are easy to separate, with segments that are shiny yellow, soft, and creamy. In contrast, chemically treated durians are harder to separate, and their flesh is often tough and pale yellow.
- Aroma: Naturally ripened durians have a strong fragrance that can be detected from a distance. Chemically treated durians will not have the characteristic strong scent, sometimes lacking any aroma.
How to choose fresh and delicious mung beans
- You should choose fresh mung beans, plump and shiny, with a natural fragrant smell of beans when sniffed.
- When held in your hand, they should feel firm and not leave any powdery residue.
- Avoid selecting beans that have unusual colors, signs of mold or pests, or have a strange smell when sniffed.
- If you cannot find shelled mung beans, you can buy whole mung beans; before processing, soak the beans for 2 – 3 hours and then rinse them clean to remove the shells.

How to make mung bean sticky rice

Soak the glutinous rice
Wash the glutinous rice thoroughly, then soak it for 6 – 8 hours or overnight. After soaking, drain the rice in a colander.

Prepare and grind mung beans
Rinse the mung beans clean and soak them in water for about 2 hours until soft. After soaking, drain the mung beans and place them in a steaming basket.
Place a pot of water on the stove and bring it to a boil over medium heat, put the steaming basket with mung beans on top, cover, and steam for about 20 – 25 minutes until the mung beans are soft, then turn off the heat and let them cool slightly.
When the mung beans have cooled down a bit, put them into a blender and blend until smooth on medium power for 2 minutes.

Steam the sticky rice
Take half of the blended mung beans and mix well with the soaked glutinous rice that has been drained, add 1 teaspoon of salt, then place it in the steaming basket, spreading it evenly and leaving a small hole in the center for the steam to circulate.
Place a pot on the stove, add 5 pandan leaves tied together, 1.5 liters of water, and bring to a boil over medium heat, then place the steaming basket with the mung bean sticky rice on top, cover, and steam for about 20 minutes.
Next, add the remaining mung beans and mix well.

Completion
You put 2 pieces of durian rice in a bowl, add 3 tablespoons of sugar, 200ml of coconut milk, and use a spoon to mix well.
Pour the coconut milk evenly over the sticky rice, stir it up and steam for another 10 minutes on low heat to finish.
