How to Cook Duck Curry

Prepare the Duck
Clean the duck meat, cut it into pieces the size of three fingers together. Marinate the duck meat with curry powder, salt, cinnamon powder, pepper, minced lemongrass, and chili, then mix well, and let it sit for about 30 minutes to absorb the spices.
The duck should be cut into pieces the size of a betel nut for easier seasoning and mouthful when eating.
Tip to Eliminate the Odor of Duck Meat:
- After cleaning the duck meat, before processing this type of meat, use ginger and alcohol to eliminate the odor. Rub the duck thoroughly with crushed ginger or rub with alcohol, the smell will be gone.
- If you do not have ginger and alcohol at home, there is a simpler and cheaper way to remove the unpleasant smell of duck: salt and vinegar. Mix them together, rub thoroughly inside and outside the duck several times, and the smell will be gone when eating.
- If vinegar is not available, you can substitute it with lemon.

Prepare vegetables
Peel the potatoes, carrots, and onions, cut them into bite-sized pieces, and soak them in diluted saltwater to reduce the sap. Drain well.

Cook the curry
Heat a pan on the stove, pour in 2 tablespoons of cooking oil until hot, then add minced garlic and lemongrass to sauté until fragrant, then add half a packet of curry powder for color (if there are no coloring cashews).
Then add the marinated duck and simmer for about 10 minutes to sear the meat.
When the meat is cooked, continue to add potatoes, onions, and carrots, pour in a little water and season to taste, then turn down the heat so that the food absorbs the rich flavors.
Please note to keep the heat low so that the duck meat gradually absorbs the seasoning more deeply.
When it boils, turn off the heat and uncover so that the onions do not become mushy. Add herbs and serve in a bowl to enjoy.
