How to choose fresh ingredients

How to choose fresh pork bones

  • You should choose pork bone pieces that have a good mix of bone, meat, and fat so that the soup is both sweet and rich, making it appealing.
  • Choose pork bones that have a bright light pink color; when you gently press the meat and fat, they should feel firm and not mushy.
  • Do not buy pork bones that look purple and have an unusual fishy smell; these are bones that have been stored for too long and are no longer fresh.

Where to buy dried seaweed?

  • Seaweed is a type of marine algae, rich in vitamins and minerals that are good for health. Dried seaweed can be prepared into many delicious and aromatic dishes.
  • You can find seaweed for soup at local markets, this product is also sold at TasteVN with prices ranging from 40,000 VND to 45,000 VND for a 40g package.

How to prepare Seaweed soup with pork bones

  • Prepare the ingredients

To eliminate the unpleasant smell of the pork bones, soak them in diluted salt water with a few slices of ginger for about 15 minutes, then rinse with clean water and let them drain.

How to clean pork bones without odor:

    • Method 1: After cutting the pork bones, use vinegar and a bit of crushed ginger to rub over the bone pieces for about 5 minutes, then rinse with water.
    • Method 2: Soak the pork bones in rice washing water for about 15 – 20 minutes, then rinse with water; this way, the bones will no longer have an odor.

Marinate the pork bones with 1 teaspoon of salt and 1/2 teaspoon of seasoning powder. Let it sit for about 30 minutes to allow the bones to absorb the flavors.

Soak the dried seaweed in 1 liter of water for about 15 minutes until it expands, then rinse and drain. Clean the green onions and chop them finely.

Put a pot on the stove, add 1/2 tablespoon of cooking oil. Wait for the oil to heat up, then add all the marinated bones, stir-frying for about 2 minutes until the bones are cooked and firm.

Next, add 1 liter of water to the pot and bring it to a boil. Once boiling, skim off the foam, season with 1/2 teaspoon of salt, 1/2 tablespoon of seasoning, and 1/2 teaspoon of monosodium glutamate.

Simmer the bones on low heat for about 20 minutes, until the soup is sweet, then add all the seaweed, increase the heat, and bring it to a boil.

Boil for another 3 minutes, when the seaweed is cooked, adjust the seasoning to taste and turn off the heat.

Scoop the soup into a bowl, sprinkle with chopped green onions and ground pepper for added appeal, and it’s done.
