How to make Hollow Fried Cake

Mixing the dough mixture
Pour 80ml of unsweetened fresh milk into a bowl, add 100gr of sugar, 7gr of instant dry yeast, 10gr of fat powder, crack 1 egg, and add 7gr of vanilla powder. Stir well to combine all the ingredients.

Kneading and proofing the dough
Next, add 300gr of all-purpose flour and 1/4 teaspoon of salt, stir well until this flour mixture is completely combined. If the dough is too wet, sprinkle in a little more flour until the dough reaches the right stickiness, smooth, and elastic.
Then, use a mixer to knead the dough on medium speed for about 15 minutes until the dough is elastic and slightly moist.
Tip: If you don’t have a machine, you can absolutely use a spoon and knead by hand until the dough is sticky and thick!After the dough has been kneaded, fold the dough from the outside in a few more times, then cover the bowl’s opening with plastic wrap and let the dough proof for about 1 hour.

Coating with sesame and rolling the dough
After 1 hour, the dough has risen, sprinkle a thin layer of dry flour on a flat surface, then pour the dough out, gently roll it into a long strip. Carefully divide it into 9 pieces, each about 70 grams.
Next, shape these pieces of dough into circles and flatten them slightly. Sprinkle a little sesame on both sides of the cake and gently use a rolling pin to flatten them into disks with a diameter of about 8 cm. If you roll the dough too small, it will result in a hollow cake, so avoid rolling the cakes too large.
Continue to do the same until all the prepared dough is used up.

Frying the cake
Place a deep pan on the stove, add about 300ml of cooking oil to the pan, adjust to low heat, and wait for the oil to heat up. Then, drop the cakes into the oil, frequently turning them to ensure they puff up evenly.
After frying for about 10 – 15 minutes, when the cakes are evenly puffed and have a beautiful brown color, remove them to a plate to drain the oil.
