  • You should choose green bean stalks that are small and long because this type will be sweeter and crunchier than the short, thick green beans.
  • Good green beans will have bright green skin, the stalks will have a certain crunch, easily breakable, and when pressed with your hand, they feel quite firm.
  • You should avoid buying green bean stalks that feel soft and spongy when pressed, as these are old beans, which will not have a sweet taste and will not be delicious.
  • Stalks of green beans that are too large or too lush should also not be purchased, as they are at high risk of having been sprayed with too many pesticides.

How to choose fresh straw mushrooms

  • Good straw mushrooms are still in buds, round or cylindrical, and when gently squeezed, the mushrooms feel slightly firm, indicating they are fresh and just picked.
  • You should choose mushrooms that are uniform in size to make the dish more attractive and tastier.
  • Black or gray straw mushrooms will be tastier than the white ones; good mushrooms will have a characteristic aroma and no strange smells.
  • Do not choose if the mushrooms have a foul smell, are discolored, feel soft and mushy when touched, or are overly large, as these mushrooms have been stored for too long and will not be good.

How to cook Stir-fried Green Beans with Straw Mushrooms (Vegetarian)

  • Prepare the ingredients

    Green beans bought should have the two ends and any damaged or rotten parts removed. Then cut them into pieces about the length of two finger joints.
    Wash the beans with diluted salt water, and finally rinse with clean water 2 – 3 times and let them drain.

    Straw mushrooms should be cleaned of any dirt stuck to the stems and then washed with diluted salt water. Cut them in half if they are too large and rinse with clean water 2 – 3 times, then let them drain.

    Remove the skin from the green onions, and remove the stems from the chili peppers before washing them thoroughly. Then, take the green onion bulbs and chili and pound them in a mortar until finely crushed.
