What is Buttermilk?
- Buttermilk is a type of milk that is fermented after being separated from the fat during the butter-making process. Therefore, it is liquid and has a very special sour taste, quite different from the yogurt you use daily.
- This type of milk can be consumed directly or used in dishes to enhance flavor, especially in baked goods like cookies, pancakes, and sweet bread, or added to some types of fried batter, used as a base for soups or salad dressings.
How to make Birthday Cake

Mixing the flour
First, sift 280g of flour into a bowl, then add 3/4 teaspoon of salt, 2.25 teaspoons of baking powder, and mix well.

Beating butter and eggs
Add 170g of unsalted butter to a new bowl to soften, then use a mixer to beat until smooth. Next, gradually add 333g of sugar to the butter bowl and continue mixing for 3 minutes until the butter is fluffy and has a light yellow color.
Tip:
- Butter should be softened at room temperature; when you press it with your hand, it should be soft enough but not melted or runny.
- Make sure to beat the butter well, as the cake’s rise and fluffiness depend on the air bubbles in the butter when whipped.
Then, add 3 eggs one at a time and beat the mixture until smooth.
Finally, add 1 tablespoon of vanilla extract, mix well one more time to complete.

Mixing the cake batter
Next, alternately add the dry flour and 240ml of buttermilk into the bowl of butter, mixing as you go with a mixer.
Each time you add a little dry flour, pour in a little milk to keep the mixture thin and easy to blend together.

Baking the cake
Preheat the oven to 175 degrees Celsius for 15 minutes.
Grease a round mold with a layer of butter, then place a sheet of parchment paper inside. Next, pour the cake batter into the mold and gently tap the bottom to spread the batter evenly.
Bake the cake for 30 minutes at 175 degrees Celsius until the top is golden brown.

Making cake decoration cream
Put 340g of unsalted butter in a bowl to soften, then use a mixer to beat until smooth.
Next, sift into the butter bowl: 1/4 teaspoon of salt, 575g of powdered sugar, 1/2 tablespoon of vanilla extract, and continue to mix evenly.
Finally, add 60ml of fresh milk (or whipping cream) and beat with a mixer until the mixture is smooth.

Completion
Put the buttercream into a piping bag, then pipe the cream onto the surface of the cake, starting from the center outwards, using one hand to pipe and the other to rotate the turntable to evenly distribute the mixture.
Next, smooth the surface again and place the second layer of cake on top. Then, pipe the cream evenly over the cake and use a spatula to smooth the sides.
To create patterns, place a knife fixed in one spot at the bottom of the cake, then rotate the turntable to shape it. Do the same for the patterns on top.
Finally, sprinkle a little colored rice on the surface of the cake to finish.
Tip: If you use a tall round mold, use a knife to cut horizontally to divide the cake in half. -
