How to choose fresh pomfret
- For live fish, you should choose ones that swim vigorously, have clear eyes, pink gills, and skin without unusual colors. You should not choose fish that swim weakly and have pale colors.
- For pre-prepared or chilled fish, you should choose fish with clear, bright eyes that are not cloudy and slightly bulging. The fish’s cornea should be elastic, gills should be pink-red, and not slimy, indicating the fish is still fresh.
- You should also avoid choosing fish with their mouths open, or if pressing on the fish’s body leaves a fingerprint, as this could indicate spoiled fish.

How to make steamed pomfret with soy sauce

Prepare the pomfret
After purchasing the pomfret, wash it thoroughly with salt water and then cut it into pieces. Next, rinse the fish with clean water, using 2 slices of ginger to rub on the fish’s skin to eliminate the fishy smell.
Marinate the fish with 1 teaspoon of seasoning powder and let it sit for about 15 minutes to absorb the flavors.

Prepare the vegetables
Tomatoes and onions should be washed thoroughly after purchase and then cut into small wedges.
For lemongrass and green onions, wash them clean and cut them into pieces about 2 finger lengths long. After washing, cut the chili peppers into small pieces!

Steam the fish
First, place the fish in a deep porcelain dish. Then, layer the ingredients tomatoes, onions, and lemongrass on top of the fish.
Season with 1 teaspoon of monosodium glutamate and 1 tablespoon of soy sauce (soy sauce) in the dish. Next, place the dish in a steamer and steam the fish for 30 minutes over medium heat.
After 30 minutes, open the steamer lid and add the cut green onions and chili on top. Continue to steam for about 3 – 5 minutes to finish.
