How to make Tapioca Noodles using tapioca flour

Mixing the flour
First, place 300g of tapioca flour into a bowl, then boil 150ml of filtered water and gradually add the water into the bowl of flour while stirring with a spoon until the flour absorbs the water evenly.
When the flour cools down a bit, use your hands to knead until the flour forms a smooth, sticky dough. Next, cover the dough tightly and let it rest for at least 30 minutes.
Tip: If the dough is too wet, you can add a little more tapioca flour and mix well. -
Making the tapioca noodles
Divide the dough into 6 equal parts and place the dough on a cutting board, using a rolling pin to roll the dough into long pieces about 1/4 inch thick.
Next, evenly sprinkle a little tapioca flour over the rolled dough pieces and use a knife to cut the dough into small noodles.
Tip: To prevent the dough from sticking to the cutting board, sprinkle a little tapioca flour on the surface of the board before rolling out the dough. -
Boil the bánh canh noodles
Place a pot on the stove, add 1 liter of filtered water, and bring to a boil over high heat. When the water is boiling, add the bánh canh noodles and boil for about 3 – 5 minutes until the noodles are soft and shiny, then remove them to a basket.
Next, place the bánh canh noodles in a bowl of cold water and soak for about 3 minutes, then rinse with water, remove, and let drain to complete.
