Making Caramel Sauce
Put 150gr sugar, 1 teaspoon of lemon juice, and 200ml of water into a pot and place it on the stove, then simmer over low heat. You do not need to stir the mixture, just watch until it boils, and gently shake the pot on the stove.
After about 5 – 7 minutes, the mixture will gradually turn a brown color. At this point, turn off the heat and add 2 tablespoons of water, then continue to gently shake the pot on the stove.
A few minutes later, the caramel will cool down a bit; pour 1 tablespoon of caramel into each flan mold.
Tip: You can prepare the molds in a steamer and then add caramel to each mold at this stage. Additionally, you can use cups or other molds as you wish. -
Whisking Eggs and Mixing Condensed Milk
First, separate 2 egg whites into a bowl, and the 2 egg yolks and the remaining 6 eggs in a bowl or another large bowl.

Making the caramel layer
First, add 80g of sugar to a pot along with 45ml of water. Then place the pot on the stove and heat over medium heat. You do not need to stir the sugar; just gently shake the pot for more even distribution of the sugar.
After 5 minutes, when you see the sugar has turned a brown color, add the remaining 45ml of water and continue to cook on low heat until the sugar completely dissolves, then turn off the stove.
After 5 – 7 minutes, when the caramel stops bubbling, evenly pour the caramel into the cake molds.
Tip: To check if the caramel has dissolved, take a little caramel and put it in a glass of plain water; if the sugar does not dissolve, then the caramel is successful! -
Beating eggs and heating milk
First, crack 3 eggs into a large bowl and whisk them lightly with a whisk. Next, add 120g of condensed milk and 350ml of fresh milk into a pot and heat over low heat for about 3 – 5 minutes.

In this step, you slowly pour the milk mixture into the eggs, then add 1/2 spoon of vanilla extract and stir well. After about 3 minutes, strain this mixture through a sieve until smooth.
