How to choose sweet, meaty shrimp
- Fresh shrimp has a transparent shell, a straight shape, with the legs and head firmly attached to the body, the joints are flexible, and the shrimp does not have a foul or strange smell.
- Prioritize buying firm shrimp, with the tail slightly closed rather than spread out.
- Do not buy shrimp that are soft and mushy, have a foul smell, have lost legs or heads, are curved, or have a cloudy color.
How to choose fresh and delicious squid
- Fresh squid has a shiny color, the brown part is dark brown, and the white part is cloudy like milk with a clear contrast; pressing the squid body feels firm and elastic.
- Choose squid with clear eyes, visibly seeing the pupil, with the tentacles and arms firmly attached to each other and to the squid body.
- Do not buy squid that looks dull, soft and mushy, leaking fluid, or has a foul smell.

How to prepare Crispy Fried Noodles with Mixed Vegetables

Prepare the vegetables
Peel the carrots and cassava, wash them clean, and cut both into thin slices. Wash the mustard greens, cut them into pieces about 2 finger lengths long, and let them drain.
Cut off the roots of the green onions and celery, remove any wilted leaves, then wash them clean and cut into pieces. For the onion, peel, rinse with water, and cut into wedges.
Wash the shiitake and straw mushrooms in clean water, then soak them in diluted salt water for about 10 minutes before rinsing again. Cut larger mushrooms in half or into thirds for bite-sized pieces, while smaller mushrooms can be left whole. Peel the garlic and shallots, then mince them.

Prepare the other ingredients
To reduce the bad smell, after rinsing once with water, soak the pork rind in white wine for about 30 minutes, then rinse with clean water several times and place on cutting board and cut into bite-sized pieces.
Shrimp should be rinsed with salt water and then washed clean again, peeled, and to make it look nice, you can leave the shell on the shrimp’s tail.
Squid should have the eyes, ink sac, and internal organs removed, washed thoroughly, and then cut into bite-sized pieces and drained.

Stir-fry shrimp, squid, and pork rind
Place a pan on the stove, heat 20ml of cooking oil, then add 1/3 of the minced onion and garlic to sauté until fragrant, then add the pork rind and stir-fry over medium heat. After 5 minutes, when cooked, remove to a bowl.
In the same pan used to stir-fry the pork rind, add 30ml of cooking oil and the remaining 1/2 of the minced onion and garlic, sauté until fragrant, and then add the shrimp and squid to stir-fry.
Season with 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1/3 teaspoon of monosodium glutamate, then taste and adjust seasoning as needed. Stir-fry for about 3 minutes until the shrimp and squid are cooked, then transfer to the bowl with the pork rind.

Make crispy mixed noodles
Boil 450ml of cooking oil and then add the noodles to fry on high heat, turning both sides until the noodles are golden and crispy, then remove to a plate to drain the oil.
Pour out some of the oil in the pan, leaving about 2 tablespoons, heat the oil and add the remaining minced garlic and onion to sauté until fragrant.
Next, add all kinds of vegetables including carrots, onions, cassava, shiitake mushrooms, and green onions and stir-fry quickly on high heat.
When the vegetables are just tender, add the pork skin, shrimp, and squid to stir-fry together, seasoning with 1 tablespoon of oyster sauce and mix well.
Stir-fry until the water boils, dissolve 1 tablespoon of tapioca starch in 30ml of water and pour it into the pan, when the water boils again, taste and adjust the seasoning, add green onions and celery, stir well, turn off the stove, and sprinkle with 1 teaspoon of ground pepper.
Scoop the stir-fried vegetables with shrimp, squid, and pork skin over the plate of crispy noodles to finish.
