How to choose fresh and delicious potatoes
- Choose potatoes that have a yellow, smooth, and intact skin.
- Select potatoes that are of similar size, medium, feel firm and heavy, and when pressed gently, should feel slightly hard.
- You should not buy potatoes with wrinkled skin or dark spots. Also, avoid potatoes that are too soft as these are ones that have been harvested for a long time and are about to spoil.
How to Make French Mashed Potatoes

Prepare and Boil Potatoes
After buying potatoes, wash them thoroughly with water and let them drain.
Place a pot on the stove, add 500ml of filtered water, 6 cleaned potatoes, and 2 teaspoons of salt, then boil for about 25 – 20 minutes.
How to Prepare Potatoes Without Browning- Method 1: After peeling the potatoes, soak them completely in a large bowl of water mixed with 2 – 3 tablespoons of vinegar or lemon juice for 3 – 5 minutes, then remove and let them drain.
- Method 2: If you are using the potatoes immediately, after peeling, soak them completely in water to prevent discoloration.

Cook the Cream
Next, peel 6 shallots, wash them, let them drain, and slice them thickly into a bowl.
Peeled and crushed, add 6 cloves of garlic, 5g of dried thyme, and 1 dried bay leaf.
Place 500ml of heavy cream on the stove, add all the ingredients in the bowl, and simmer on low heat until it boils, then turn off the heat.
Tip: Cook the cream just until boiling, do not let it boil for long as this will cause the cream to separate and lose its richness. -
Mashing the potatoes
After the potatoes are cooked, take them out, use a towel or clean cloth to hold the potatoes to avoid burns, then use a knife to peel off the skin while the potatoes are still hot.
Put the potatoes into a mashing tool, mash them finely, and then transfer them to a bowl.
Tip: Unlike American-style mashed potatoes, the French version must be smooth and creamy, so if you don’t have a mashing tool, you can put the potatoes in a blender to blend them until smooth and then pass them through a sieve. -
Mix the mashed potato mixture
Next, add 60g of unsalted butter, 1/2 teaspoon of salt, strain the cream through a sieve, and then combine everything in the bowl of mashed potatoes.
Pour everything into a large bowl and use a mixer to whip the mixture until fluffy.
