  • It is advisable to choose mung beans that are still fresh, plump, and shiny, with a light natural fragrance when smelled. When held in hand, they should feel firm and leave no powdery residue.
  • Do not choose beans that have unusual colors, signs of mold or pests, or have an unusual strange smell when smelled.

How to choose fresh potatoes

  • It is advisable to choose potatoes that feel firm in hand, heavy, intact, and have a smooth skin surface. Additionally, yellow potatoes will be tastier and sweeter compared to those that are slightly white.
  • Do not choose shriveled potatoes, those that feel soft when pressed, or have black eyes, are rotten, or leaking. Absolutely do not choose potatoes that have turned green or sprouted as they are extremely dangerous to health.

How to make Cam cake – green bean stuffed fried cake

  • Prepare the ingredients

    Wash the potatoes and then cook or steam them until done, then peel and mash them thoroughly with a fork along with 3 tablespoons of cooking oil (about 45ml).

    Soak the mung beans for about 2 hours to soften them, then rinse the beans and blend them in a blender with 1/2 cup of sugar and 1/2 cup of water.

  • Make the mung bean filling

    After grinding the mung beans until smooth, put the beans in a pan with 1 tablespoon of cooking oil (about 15ml), stir over low heat until the beans are sticky and smooth, and no longer stick to the pan.

    Next, let the beans cool completely, then divide into equal parts and roll them into balls.

  • Make the orange cake dough

    In a bowl, add 2 cups of glutinous rice flour, 1 cup of rice flour, and 1/2 cup of tapioca flour, then mix the ingredients evenly. After that, add the mashed potatoes.

    Next, gradually add 300ml of boiling water to the flour, knead the dough until it forms a smooth and elastic mass that no longer sticks to your hands.

    Tip: The amount of water depends on the absorbency of the flour, so add it gradually. If the dough feels dry, add more until you achieve a smooth dough that does not stick to your hands.

    Divide the dough into two equal parts, one part you boil for about 5 minutes to partially cook the outer layer. Then, knead the boiled dough with the raw dough until a uniform, smooth dough is obtained.

  • Shaping and frying cam cake

    Take a moderate amount of dough, roll it out thin, then place the green bean filling in the center, pinch the edges of the dough tightly and roll it into a ball. Next, roll the cake in white sesame seeds and then fry it.

    Add about 200ml of cooking oil to the pan, heat the oil until it’s lightly bubbling, then drop the cakes in to fry submerged for about 10 – 15 minutes over medium heat. When the cakes are evenly golden, remove them, let them drain and enjoy.
