How to choose fresh and delicious pork belly
- Fresh and delicious pork belly has a dry outer layer, light red or bright pink color. When cut with a knife, the meat will appear pinkish-white, slightly glossy, and the interspersed fat layer is bright white and firm.
- To select a good piece of meat that does not taste too greasy due to excessive fat or too dry due to mostly lean meat, you should choose a piece with a balanced ratio of fat and lean.
- Good, clean pork belly, not raised with lean-enhancing substances, usually has a firm texture, with the meat and fat tightly held together; when lifted, it should not feel too loose. The outer layer of skin and fat should be moderately thick, about 1 – 1.5 finger lengths.
- You should not choose pieces of pork belly that have a spoiled, foul smell, or any other strange odor. Instead, you should select meat with a characteristic fragrant smell because that indicates fresh meat to ensure the quality of the dish.
How to prepare Sweet and Sour Pork Belly

Prepare the pork belly
Keep the skin on the pork, use a knife to scrape off any hair, then wash thoroughly with salted water and let it drain.
Once the pork is drained, cut it into bite-sized pieces (about 1/2 finger thick). Do not cut it too thin because it will dry out when frying.
Next, marinate the pork with 1 spoon of sugar, mix well, then wrap tightly with plastic wrap and place it in the refrigerator fridge for about 30 – 40 minutes to let the meat absorb the seasoning.

Prepare the ingredients
Take 2 shallots and 5 garlic cloves, peel them, remove the roots, and mince finely.
Remove the roots and wilted leaves from the green onions, wash them clean, then chop them, separating the green tops and the white bulbs. Cut off the stems of the chili peppers and mince them finely.

Sweet and Sour Sautéed Pork Belly
Put a pan on the stove and add 4 tablespoons of cooking oil. When the oil is hot, add the marinated pork, then spread the meat evenly across the surface of the pan and stir over medium heat. When the meat starts to turn golden brown and crispy at the edges, flip it over to cook both sides evenly.
Once the meat is evenly cooked and has a crispy edge, season with 1 tablespoon of vinegar, 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, 1/3 teaspoon of monosodium glutamate, minced garlic and onion, and half of the chili into the pan and stir well. Then add the chopped green onions and sauté for an additional 5 minutes for the meat to cook through and absorb the flavors.
Finally, taste and adjust the seasoning to your liking, add the remaining chopped green onions and half of the remaining chili, and serve on a plate.
