How to make Canele Cake

Mix the milk, butter, and egg mixture
First, place a pot on the stove with 500ml of whole milk and 45g of unsalted butter and heat it over low heat, gently stirring in one direction for 3 – 5 minutes. When the butter melts and the mixture starts to simmer (about 70 – 80 degrees Celsius), turn off the heat.
Next, take a bowl and add 3 egg yolks, using a whisk to beat them until smooth. Then, pour the entire amount of the cooked whole milk into the bowl, continuously stirring to blend the mixture together.

Mixing and resting the cake batter
You take another bowl and add 150g of cake flour and 200g of sugar, stirring well to combine the flour with the sugar.
Then, you gradually add the milk, butter, and egg mixture while continuously stirring with a whisk.
Next, add 1 tube of vanilla extract and 10ml of rum essence, and continue to stir well for about 2 minutes.
Finally, when all the ingredients have dissolved together, cover with plastic wrap and place in the refrigerator refrigerator to rest for 12 – 48 hours.

Sifting the cake batter mixture
Once the batter has rested, use a whisk to mix the mixture well, and to make the cake more fragrant and fluffy, sift the cake batter mixture about 1 – 2 times.

Baking the Cake
You take a bowl and add the remaining 15g of unsalted butter and 10ml of black corn syrup, using a specialized brush to mash and mix the mixture evenly.
Next, you proceed to spread the tip of the unsalted butter into the mold, preheat the oven for about 5 minutes at a temperature of 230 degrees Celsius. Then, you pour the cake mixture into about 2/3 of the mold, place it in the oven, and bake at the same temperature for 10 minutes.
After that, you lower the temperature to 190 degrees Celsius and continue baking for another 35 – 40 minutes. Once the cake is evenly baked, you turn off the oven, let it cool down a bit, carefully remove the cake from the mold, and enjoy!
