Shaping and steaming the cake
Evenly coat the round aluminum mold with cooking oil; you can also use smaller molds for more diverse shapes.
Prepare a steaming pot, add water to the pot, then place the molds on the steamer and put the pot on the stove to bring to a boil over medium heat.
Start by adding a layer of green batter into the mold, ensuring that the layer is about 1/4 finger thick, then steam for about 5 – 10 minutes. When the batter turns translucent, pour a layer of mung bean batter on top and cover to steam for another 5 – 10 minutes. Continue to pour each layer like this until you run out of batter.
When pouring the last layer, steam the cake for about 20 – 25 minutes to ensure it is completely cooked.
After cooking, let the cake cool completely before using a knife to gently slide around the edges of the mold and remove the cake to avoid breaking it.
Tips for making beautiful steamed layer cake- To ensure the steamed cake has a smooth surface without pockmarks, remember to cover the lid with a thin cloth to prevent water from dripping onto the cake while steaming.
- For a more beautiful alternating color layer cake, you should pour the layers of batter with a moderate and even thickness.
- For roll cakes, avoid pouring layers of batter that are too thick and having too many layers, as it will be difficult to roll the cake. For rolled cakes, it’s best to remove the cake while it is still warm; this will make it easier to roll and shape.
- To prevent the layers from separating, do not wait too long before pouring the next layer. As soon as the layer turns translucent and the surface is set, pour the next layer on.

How to choose good peeled green beans
- Choose beans that are of moderate size, uniform, with the halves intact, and without signs of insect bites.
- Use your hands to squeeze; if the beans feel firm and not soft or easily breakable, they are good.
- Do not buy beans with unusual colors, that are damp or moldy, and have a strange odor when smelled.
- You can find peeled green beans at reputable supermarkets or grocery stores.
How to choose fresh pandan leaves
- It is best to choose pandan leaves that are dark green, shiny, with the underside possibly being a slightly lighter green.
- Good pandan leaves will be long and large, with younger leaves being tastier than older ones. Additionally, choose leaves that are not bruised or scratched too much, and when you smell them, they should have a gentle and pleasant aroma.
- You should avoid choosing plants that are wilted, turning yellow, or broken and bruised, as they will have less fragrance and a bitter taste when used.
Where to buy coconut milk?
- Currently, there is also a type of canned coconut milk available on the market, which is very convenient to use, and you can easily find it at supermarkets or at TasteVN stores nationwide.
